Is there a setting on digital cameras for the pixels per inch? I have several photos that I have to clean up for the catalog I am working on. Taken with a Sony CyberShot DSC-P93. The file I am looking at is 2592x1944 but they are only 72 pixels per inch. The printer, of course, wants 300dpi.
What am I forgetting?

You can only get the dimensions they will all be 72ppi you have to figure out what size you want the photos at 300dpi. Then you have to do a little math. To figure out what size you need to be at for 72ppi.

ok, according to my camera's reference manual, I can choose from the following:
Small: 640 x 480 pixels - basically used for web use only
Med: 1600 x 1200 pixels - print 6 x 4" postcard size prints
Large: 2048 x 1536 pixels - print 8.5 x 11" prints
XL: 2592 x 1944 pixels - prints larger than letter size prints.

Open the image in photoshop. Go to Image>Image Size. UNCHECK the resampling button, type in 300 in the resolution box. Your images will automatically resize to 8.64 inches by 6.48 inches. All pixel data retained. No mathematics involved on your part - photoshop will do it for you.
