Most bacon consumed in the UK is back bacon (also called short back bacon). The cut comes from the loin in the middle of the back of the animal. It is a lean meaty cut of bacon, with relatively less fat compared to other cuts.
Back bacon is known as Canadian bacon in the United States but not in Canada, where it is simply called back bacon. In Canada it is traditionally unsmoked back bacon that has been sweet pickle cured and coated in yellow cornmeal. This variation is also known as peameal bacon, because in times past a mixture of ground yellow peas was used for coating to improve curing and shelf-life. The "Canadian" bacon sold in the United States is plain lean back bacon.

there are only a few places around here where you can get them... but here is a recipe!

http://www.digsmagazine.com/images/nourisharticles/poachedeggs/eggsbenedic.jpg

eggs benedict:

4 poached eggs, warmed
4 slices Canadian bacon
2 English muffins, split in half
hollandaise sauce

hollandaise sauce
5 Tbsp. butter
2 egg yolks
2 tsps. lemon juice
good dash of cayenne pepper

yields 4 eggs Benedict, enough for 2 people with good appetites

1 Make the hollandaise sauce while your eggs are poaching, or while you're boiling the water to warm up pre-poached eggs. Melt the butter over low heat on the stove, or in the microwave. Meanwhile, combine the egg yolks, lemon juice and cayenne in a blender or food processor. Blend it all up on low speed, then, with the machine still running, slowly drizzle in the melted butter. When the mixture's thickened, transfer to a metal bowl and add more lemon juice plus salt to taste. Keep the sauce warm by popping the metal bowl into a larger bowl filled with hot water. Do not reheat the sauce on the stove -- you'll only end up curdling it.

2 Toast the English muffins. Heat up a dry skillet, and pan-fry the Canadian bacon slices on both sides until heated-through.

3 Assemble the Eggs Benedict by topping each English muffin half with a slice of Canadian bacon, followed by a poached egg. Drizzle the whole shebang with hollandaise sauce, and enjoy!

Quickie variation: Skip the sauce and top with a slice of cheese instead. Just pop the assembled concoction in a toaster oven to melt the cheese, and you're ready to serve.

EC

yeah beans with breakfast are the best, you need a cup of tea too not coffe.... you cant beat a mug of tea with a full english (bacon, sausage, beans, egg, mushrooms, fried bread, tinned tomato and half a fried tomato, some people have black pudding to but personally i think its horrid!)

You need heinz baked beans though... when i lived in LA for a bit i could find proper beans only refried and/or pork and beans, refried beans make you fart real bad!

I don't mind the black pudding, I just don't want to be reminded what it is. lol

Good tip on the beans thing, I always use the pork and beans -- let's face it, they don't put any pork in there anyway. But I'll look for heinz.

Now the tea thing, I still haven't aquired a taste. I've got a whole cupboard full of different teas and I can never find one I like. What do you recommend?

And don't say PG Tips.

yeah you deffinately need Heinz beans... anything else is just rubbish!

err... on the tea front i'd go for Tetley, Yorkshire Tea (the bees knees dude), Typhoo...

if you cant make up your mind about it try it with sugar, i hate tea without sugar blaaaAAaagh! its disgusting, Brown or white although i preffer it with brown sugar as its kinda caramelly tasting.

also with tea its how your brew it... buy a tea pot.

if you cant be arsed to use a tea pot, using boiling (not hot) water, let the tea sit in the hot water in the mug for a bit on its own (ie no milk or sugar) then when its been in for a bit give it a good stir and squash the tea bag up the side of the mug with the spoon to get all the good stuff out (this is very important) then add milk and sugar... experiment with different amounts of milk too i like mine milky where as you could stand a spoon up in my girlfriends tea!

can't believe i just typed a post about making a cup of tea on a design forum board... ha ha ha

What is tripe? I had never heard of it before I played Harry Potter on xbox. lol (Bernie Botts every flavor beans)

As a rule, I love French food, but that looked nasty.

I will say this -- you brits have some STRANGE food in the canned section of your grocery store. I had to buy a few selections to peel off the labels and bring home so people would believe me. (things like beans, french fries, scrambled eggs -- all together and living in one can!)

Absolutely!
I also find I prefer using a teakettle to heat the water in. Something much more nostalgic and proper about a teakettle as opposed to a microwave.

Honey's not bad for tea. Those sweetners scare me....
I buy rock sugar and grind it down.

Honey is most excellent - specially with a sore throat.
And yes, sweeteners scare me too. There was an article in Newsweek a few weeks ago about Splenda, how they say it is made from sugar. No, it isn't, it's chemically derived from Chlorine to act a little like sugar. Nothing natural about it. Eeewwwww.
