Can anyone enlighten me as to how/if it is possible to print all text in a PDF document in greyscale!? So for example, white-on-colour block headings will print out as black headings on white paper (without the heading blocks or other non-text content) rather than printing the heading blocks as white on grey?

As long as the pdf is not a complete image file (say a pdf from Photoshop) you can take a pdf and totally edit colors, type, images, etc. by the item or globally throughout a document. Or set up an 'action' and have pitstop do your converting to a batch of files. I have an 'action' set-up to change all rgb colors to cmyk and another to change the infamous colors "All" and "Auto" to black. Or cmyk images to greyscale. Change knockouts to overprint.
