I'm working on a brochure in Indesign, which requires photo images. Some of the images are in color, - do i change them to grayscale in Photoshop and then place in Indesign? Also, which file format should i use?

I noticed that the older version of this brochure had embedded eps image files.

What would be the best way to work with photo images in a brochure for print?

Any help is appreciated.

If the images are being printed in black and white, place them that way.

As far as embedded or not, ask the printer. Most don't like embedded images unless the links are sent along with the file.
