Hi,
I have a logo (CMYK) that needs to be converted into 2-colors.
I converted it to Duotone and then chose a Pantone blue and white.
1. Since I cannot select a pantone white, how would I go about this?
2. Would I need to create a 1-color file, since the bgr (paper) is already white and specify the region that gets knocked-out?
If so what would be the proper way in doing this in Photoshop 7?

I am not involved in the printing process, so I don't know how they are going to print it.
The only thing I know is that they want it ready for 2-color printing.
Since the logo is a raster image (CMYK), I need to somehow convert it, so I can import it into Illustrator
and it's still saved with it's spot colors.
How would I go about it if I would want to only apply 1-color (in my case blue) (Monotone?) to the logo, and let the white type shine through (hence paper bgr is white)?
Is there a specific way how to specify this? Clipping path?
What format would I need to save this file in?

You will need to create a DCS file or a duotone. I dot it a few ways utilizing channels and layers. Can you attach a snapshot of the file in your reply?
