Made this last night, super easy, super tasty:
SPINACH EGG DROP SOUP
Pour a carton to a carton and a half of chicken broth (I use the Swanson reduced sodium/99% fat free one) into a large pot over medium-high heat. Season with a little salt, some black pepper, a touch of ground ginger, and a few dashes of soy sauce. Thaw about a cup (maybe a little more than a cup) of frozen spinach in the microwave, use a paper towel to soak up most of the water (you can leave some in). Put the spinach in the pot, and let everything come to almost a boil. In the meantime, beat 3 eggs (perhaps 4 if you want the extra protein). Once the soup is hot, turn off the flame. Slowly pour the beaten eggs into the soup while you stir. Let sit for a minute or two, then serve. Should make about 6 small bowls.
You can also add chopped cooked chicken if you'd like towards the beginning, perhaps scallions at the end.
Keep in mind I don't ever measure, so my "measurements" might be off. You can also change the proportions of everything as you see fit. I like my soup thick with spinach and egg, but if you want a thinner "brothier" soup, use half the spinach and only 2 eggs.

Here is my great grandmother's recipe, slightly modified by my grandma. My grandma told me her mother used to hand pull her filo from scratch. I wish I could live up to that!

I'm making pork belly again tonight. This time it's going to get crisped up in the oven though after 2 hours of simmering with spices and stuff.

It's been super miserable weather lately so last night we had Soup and Bread. Only fancier than that implies.
Vege soup
Half a pumpkin
1 Kumara (sweet potato)
1 Potato
Half a cup of yellow beans
A big handful of left over roast beef bits
1 zuchinni
half a cup of milk
Whatever else you have plus salt and pepper to taste
Boil the crap out of the vegetables, drain, mash, put back on low heat and add meat, herbs, salt and pepper and milk. Ready when it's hot.
Now to the bread.
6 slices of bread
3 mushrooms (sliced)
cheese
mayo
mustard
ground pepper
Spread mayo on 3 slices of bread. Put cheese and mushrooms on top, squirt mustard on top of those and add another piece of bread. Add a good dollop of butter to a heated frying pan and do each side of the sandwhiches until brown and all the cheese has melted.
Serves 2 very hungry punters.
My boy couldn't believe how yummy the toasted sandwhiches were neither could I.

Guinness Cupcakes

Despite the addition of Guinness, these cakes are not at all bitter; instead, the beer adds richness and moisture, and balances the sweetness of the sugar. Working from another Nigella recipe, this one the Guinness Cake from Feast, I substituted brown sugar for white to add depth of flavor, and made tiny cakes instead of a large one in a springform. Topped with a cream cheese glaze, these are a crowd-pleasing, not-too-sweet dessert (and, if you call them muffins instead of cupcakes, and play up the beer angle, you can easily pass them off to guys). They’re also super-easy.
Cake
1 cup Guinness
1 stick, plus 1 tb, unsalted butter
3/4 cup unsweetened cocoa
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tb vanilla extract
2 cups flour
2 1/2 tsp baking sodaGlaze*
8 oz cream cheese
1 1/4 cups confectioners’ sugar
1/3 cup milkPreheat oven to 350; butter a muffin tin.
Combine the Guinness and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Remove from heat, and whisk in the cocoa and sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into muffin molds and bake for 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tin, and cool completely on a rack.
Using a mixer, whip cream cheese until smooth, sift in sugar, and beat. Add milk, and beat until smooth. Spread glaze over cooled cupcakes.
*To create a thinner glaze, use a tablespoon or two more milk; for a topping more akin to icing, use less milk, and perhaps more sugar. In either case, add a little sugar or milk at a time, mix, and check for desired consistency.

I'm trying to find a recipe for an amazing bread my friend makes. She uses a loaf of french bread, slices it like for garlic bread, makes a mixture of something that includes sour cream, onions, mozzarella cheese, but I'm not sure what else. It's amazingly good, but I can't find a recipe for it anywhere and even have done the search by ingredients on three sites. Damn...so if anyone has one of those goofy bread recipes like Heart Attack Bread (that's what she calls it), I'd love to see it and see if it's close.
When are the cupcakes ready?

Not to hijack...what do you think of Lost lately Garricks? My brain is switching gears from the feeling of seasons 1 and 2 to now. Its still crazy good, but in a different way.

Thanks for the links on the breads. One of those I looked at, the other one I downloaded the recipe, because it sounded good. It was wrapped in foil and baked so I'm sifting through the one with all the bread recipes.
I've asked my friend a few times for the recipe, but it's not at the top of her list to write it down. If I do ever get it, I'll be sharing. It's wickedly good.

the wunder sauce
1 large tomato, chopped
a couple large basil leaves
2 tablespoons minced garlic
1/4 cup of margarine
-melt margarine @ medium heat.
-throw in garlic & tomato.
-allow to simmer for 5 minutes.
-throw in basil (depending on the freshness
of the basil will dictate how and when to
add it to the sauce. use your imagination)
-add salt and pepper to taste.
-allow to simmer to a creamy texture.
serve with your favorite pasta.
notes:
-DO NOT BURN THE MARGARINE.
-you might have to add margarine along the way. don't be afraid to.
-for a "special occasion" add a couple tablespoons of that old white wine you might have distilling in the fridge.
-add a teaspoon of honey if your palate requires "sweetness"
-my wife loves this recipe

Buda's Honey roast chicken with gravy.
This feeds 2 I guess you could double the ingredients for 4.
You'll need:
2 chicken thighs
1 onion
Herbs, salt, pepper
2 tablespoons of honey dissolved into 1/4 cup of hot water
Splash of soy sauce
Flour
To serve with mash/rice and vegies.
Dice an onion and scatter in a over proof dish. Add chicken. Splash soy sauce, oil and honey/water mix onto chicken pieces. Season with your favourite herbs and salt and pepper.
Bake for 1 hour at 200C turning over chicken once.
Remove cooked chicken from dish and pour sauce and onions into a small saucepan. Simmer for a couple of minutes and add 1 or 2 tablespoons of flour. Mix well. I add some salt here too. It's supposed to be gravy so you be the judge how much flour you need.
Gravy goes well with sweet potato mash or rice and some quickly boiled vegetables. Sweet potato mash compliments the honey in the gravy very nicely.

This recipe is for the younger designers on the board, the ones just starting out, or people like me who have a worthless, dead-end, never gonna give you a raise, complain about how little money is flowing into the company yet you find the profit/loss statement for the year and find out that company brought in 465k last year and the publisher took home over 118k and he can't even see fit to pay you enough so that you may say that you are living above poverty level...but I digress.
I came up with this recipe while spending a year of eating NOTHING BUT Ramen noodles while paying for my DUI fine and having less than $40 to feed myself with for a two week period.
Spiced up Ramen noodles
1 package of Ramen (flavor of your choice)
Dash of Garlic Powder
Dash of Onion Powder
Dash of Cayenne Powder
cook the Ramen in the microwave adding all the ingredients but leaving out the flavor packet.
once the noodles are cooked add the flavor packet and mix thoroughly.
Now, drink the broth, throw the noodles away, and eat your shoe.

I just found this recipe for Avo soup! Sounds pretty yummy to me. And I'm still waiting for you to post that muffin recipe, tuliptree! *taps foot impatiently*
Avocado Soup
Yield: 6
Ingredients:
4 Ripe avocados
2 cups Chicken consomme/broth
1 cup Sour cream
1 cup Table cream
Ground ginger
Paprika
Salt & pepper to taste
Peel & dice avocados. Combine in blender with onion juice, consomme or
broth, sour cream and table cream. Blend until smooth. Season to taste with salt, pepper and ginger. Store in covered, opaque container in refrigerator until chilled and ready to serve. Top with additional sour cream if you like and sprinkle with paprika. Note: plain yogurt can be substituted for the sour cream for a somewhat more healthful dish. Be sure to pour off any excess water in the yogurt before adding to other ingredients.

Baked Fudge Pudding-Mix
Yield: 9
Ingredients:
1 1/2 cups Bake it all mix
1/2 cups Granulated sugar
2 tablespoons Cocoa
1/2 cups Milk
1 teaspoon Vanilla extract
Topping-
1/4 cups Cocoa
3/4 cups Brown sugar -- packed
1 1/2 cups Water -- boiling
Combine cake ingredients. Stir to blend. Spread batter in 8 by 8 by
2-inch pan, bottom rubbed with shortening. Combine topping ingredients,
stirring until cocoa is thoroughly dissolved. Pour over batter. (Don't be
afraid! It is NOT a mistake.) Bake in a 350 F. oven about 40 minutes.
Spoon into dessert dishes. Serve warm with topping or whipped cream, if
desired. Yield: 9 servings

Avocado Orange Soup
Yield: 4
Ingredients:
2 large Ripe avocados; pitted
1 cup Fresh orange juice
1 cup Plain yogurt
1/2 teaspoons Tabasco pepper sauce
1/4 teaspoons Salt
Orange slices
In food processor or blender, blend avocados and orange juice. Add yogurt,
TABASCO sauce and salt. Blend until smooth. Refrigerate until ready to
serve. Garnish with orange slices.

I would love some avocado soup, but I have trouble finding 1 perfectly ripe avocado these let alone 2 or 4!
Easy baked mushrooms
I made this yesterday as a "snack" along with some other snacks to serve my guests at home. Just give everyone a fork and tuck in.
Mushrooms.
I would estimate about 4 to 6 mushrooms per guest. More I guess if this is going to be part of a meal.
Pesto
Olive oil
Salt & pepper to taste
If you have large mushrooms as I did, then slice in half. If they are small mushrooms, then double the quantity and leave whole.
Preheat oven to 200°C Put mushrooms into an oven proof dish. Drizzle olive oil and mix in pesto, salt and pepper. Bake for 20 minutes. Enjoy!
This dish was a total hit and my guests vowed to make it at home. It's piss easy and super yummy.

These look strange but are delicious
Green Hairy Meatballs:
Ingrediants:
1lb ground turkey
1 clove of garlic (or 2 tsp of dried minced garlic reanimated in 2 tsp of water)
1 small onion - minced (or 1tbs dried minced onion reanimated in 2 tbs of water)
1/2 box of frozen chopped spinich
1/2 block (about 1/3 cup maybe) of Feta cheese
1 egg
1/3 cup of Italian flavored bread crumbs.
Preheat oven to 350°,
Cut frozen spinach in half with serrated knife (keep hospital emergency room address handy). Put half back in freezer for next time. Thaw half in mesh strainer under hot running water. Squeeze out excess water and set aside.
In large bowl mix turkey, bread crumbs, egg, onion and garlic until uniformly mixed.
Crumble feta cheese with a fork in a separate dish until you have 1/4" bits then add to meat mix. Separate spinach so it isn't lumpy and add to meat mix. Mix together gently until distributed but not blended.
Scoop out meatballs with a 1.25" ice cream scoop and set on foil lined cookie sheet. If you don't want them to look 'hairy' roll them in your hands as regular meat balls. I'm too lazy.
Bake for 20-25 minutes until done.
Serve over garlic-butter pasta.
This recipe makes about 20-25 meatballs.
(Note, if really lazy, you can just put in loaf pan and cook 30-35 minutes until done and you have green&white meatloaf.)
Well, I may just have to try that one PD! I've never really tried cooking much with ground turkey, so this one sounds like a good one to venture into that realm.

1/2 cups Oil
1 tablespoon Vinegar
1 tablespoon Fresh lemon juice
2 tablespoons Vermouth
2 tablespoons Dijon mustard
Salt and white pepper
2 tablespoons Parsley -- chopped
Fill cavities with baby artichoke hearts. Combine the remaining
ingredients, leaving the parsley for decoration. Pour the sauce over the
arichoke hearts. Sprinkle with parsley and serve.

... and I am the same as you guys ... Ground turkey for most everything but hamburgers. 90% of my protein intake is from Turkey and Chicken and fish ... but every now and again I need a nice big, bloody piece of beef :D

Here is a chicken recipe that also includes the use of popcorn as a stuffing. Imagine that. When I found it, I thought it was perfect for people like me, who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try. BAKED STUFFED CHICKEN 6-7 lb. Chicken 1 cup melted butter 1 cup stuffing (Pepperidge Farm is good.) 1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT) Salt/pepper to taste Preheat oven to 350 degrees. Brush chicken well with melted butter, salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds. When the chicken's ass blows the oven door open and the chicken flies across the room, it's done. :eek: And, you thought I couldn't cook......... Thanks Ma!

I made this last night to go with some other yummy bits. I'm going to make it again tonight as part of a pot luck dinner.
Buda's garlic and herb roast potatoes
Allow 2 potatoes per person
Allow 3 cloves of garlic per person
Plenty of salt, pepper, soy sauce and whatever herbs you have on hand (I used a dried italian herb mix). I don't have chili flakes but they could be nice.
Oil - 2 tablespoons per person
Cut potatoes into chunks. Peeling is not necessary as long as they are washed. Boil potatoes for 20 minutes until just done.
Preheat oven to 200°C. Cut the bottoms of the garlic (don't peel), drizzle a tiny bit oil on top and bake for 10 minutes until garlic is soft.
Squeeze all the garlic out of their skins into a bowl. Add salt, pepper, herbs, soy sauce and plenty of oil. I have a muddler, but a mortar and pestle would be better. Mash the garlic until the mixture resembles something like an oily pesto.
Drain the potatoes and put into an oven proof dish. Mix in tasty mixture and return to oven a hot for 20 minutes.

In Honour of Victoria Day:
Victoria Sponge Ingredients
285g Self-raising flour
2.5 teaspoons (12.5ml) Baking powder
285g Margarine
285g Caster Sugar
5 Eggs
Raspberry or Strawberry Jam
Buttercream Ingredients
150g Softened Butter
340g Icing Sugar
3 tablespoons (45ml) Warm water
Equipment required
2 greased 8-inch sandwich tins
Sieve
Large mixing bowl
Electric whisk
Cake
- Sieve the flour and baking powder into a large bowl
- Add all the other ingredients into the bowl
- Using an electric whisk beat the ingredients together, starting slowly then medium until you get a smooth, creamy consistency
- Divide the mixture between the two sandwich tins and bake at 170 degrees centigrade (340 degrees Fahrenheit) for 30-40 minutes. The cake should be springy to the touch.
- When cooked immediately turn out onto a wire rack.
Buttercream
- Soften the butter and beat until smooth
- Gradually add the icing sugar, beating well
- Add the water and beat until smooth
Spread some jam on one half of the sponge and buttercream on the other and sandwich together. Sieve icing sugar on top
Tips
My tips for a good Victoria Sponge are:
1) Use good quality 8-inch sandwich tins. Line them with greaseproof paper to avoid the cake sticking
2) If you have a fan oven, do not use the fan feature. Cakes cook much better on the traditional oven setting
3) Be careful not to use too much jam or buttercream otherwise the cake may slide apart when sandwiched together. Do however spread the jam and buttercream to the edge of the sponges as this will enhance the appearance of the cake
4) When turning out the cakes onto the wire rack, try turning one out onto a solid surface (like a chopping board) and then put it on the wire rack so that the top of the cake does not get the marks from the wire rack. This will make it look much better.

Sorry, guys, it came in metric. I'll see if I can find a converted recipe. I use a scale to weigh out ingredients, and all of my liquid measures have both English and Metric equivs.

Let me assure you, using whole wheat English muffins in place of regular French bread to make French toast is perfectly delicious!
You know how those mornings go. You want to eat a particular breakfast, but you don’t have all the exact ingredients. Well, I wanted French toast and only had day old whole wheat English muffins in the pantry.
WOW! They turned out GREAT! My kids (who I thought would freak out) totally chowed down. I followed Chef John’s (http://foodwishes.blogspot.com/2007/09/french-toast-fancy-brunch-restaurant.html) French toast recipe (http://simpledailyrecipes.com/most-awesome-french-toast/) just as normal and everything turned out fine.
HERE’S ALL IT TAKES
6 slices whole wheat English muffins
1/2 cup healthy egg substitute, or 2 eggs
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
pinch of salt
pinch of nutmeg
2 tablespoon butter for frying
Pure Maple SyrupVery Important First Step:
Heat oven to 400F degrees and heat up griddle pan on medium heat.
Mix the healthy egg substitute, milk, vanilla, cinnamon, salt and nutmeg in a LARGE bowl; large enough to hold all 6 slices of bread.
Allow the bread to soak up all the liquid in the bowl.
Melt butter on griddle pan for an even coating. Add bread slices and cook for one minute on each side, until light golden brown.
Transfer bread slices to a ungreased cookie sheet and bake for 12 to 15 minutes. Remove from pan, drizzle with a little pure Maple syrup and serve HOT!

A Basic Victoria Sponge
Quick to make and endlessly versatile, a Victoria sponge cake is a very useful weapon in the teatime arsenal. Not a true sponge, inasmuch as it contains butter, it keeps for longer and is slightly more robust. It also freezes well, where a true sponge can become slightly tacky when defrosted.
Two tips for cake-making in general – if you're going to go to the bother of cutting greaseproof discs for lining cake tins, then never just do one or two – get a roll of greaseproof and cut yourself a good supply of them; it will save valuable time if you find yourself needing to make a cake in a hurry. The other tip is to have the butter so soft it's almost melting. Once beaten with the caster sugar the mixture becomes incredibly light – far more so than with simply room-temperature fat.
Ingredients:
4 eggs
8oz caster sugar
8oz butter
8oz self-raising flour
1 teaspoon vanilla extract Method:
As mentioned above, have the butter so soft it has almost collapsed...the best way to achieve this is to put the butter in the mixing-bowl and then into the microwave for 10 seconds or so. Add the sugar and beat until white and fluffy. Add each egg individually and beat again. Add the vanilla extract, then fold in the sieved flour gently. Divide the mixture between two sponge tins that have been lined with a greaseproof disc and bake on GM5 or the equivalent for about 20 minutes. Check after fifteen minutes and swap the tins round in the oven if one is getting cooked faster than the other. Open the door carefully so as not to let cold air rush in, which might cause the cakes to sink.
Cool on a wire rack – I always put a double thickness of kitchen towel under each sponge before turning out onto a rack, so it doesn't either stick or come away with grid-marks.
When cold, fill with strawberry jam and double cream for a traditional Victoria Cream Sponge.
Otherwise, do what you want with it – butter icing, fudge icing, flavoured cream, chocolate fondant – anything you like.
For chocolate cake, make a Victoria sponge, but instead of using 8oz self-raising flour, use only 4oz and add 4oz sieved cocoa. Then carry on as before. This sponge won't rise quite as much as the plain variety, since there's less raising agent (because less flour), but it makes a very grown-up cake and I don't bother to add extra baking powder because I don't think it needs it.
Fill and cover with chocolate icing: melt 3oz butter and add 8oz icing sugar and 4oz cocoa. Beat together, adding a little cold coffee if the mixture is too thick. Don't over-beat, or it will become too light in colour. Melting the butter before adding the cocoa and icing sugar gives a fudgier result.

I think I've perfected the muffin recipe I was using. Also got rid of any weighing or more complex meausurements. Everything is in teaspoons, tablespoons or cups.
Buda's savoury muffins
Sift into a large mixing bowl:
2 cups of plain flour
1/2 teaspoon salt
3 teaspoons baking powder
Add:
1/4 teaspoon black pepper
1/4 teaspoon herbs (whatever you have handy. I used mixed herbs, but oregano, basil would work)
1/2 cup grated cheese
1-2 tablespoons each of diced vegetables.
Around 2-5 kinds of vegetables depending on what you have in the fridge.
Vegetabes I've tested: onions, mushroom, tomato, spring onion, brocolli.
Others that will be nice: capsicum, peas, courgette, sweet corn
Could also try bacon bits or ham for the carnivores.
Then add:
1 egg, beaten
4 tablespoons butter, melted
3/4 cup milk
Spoon the mixture into greased muffin tins. Bake for 15 minutes at 200°C (400°F). Wait for to cool for a moment and nom nom nom.
Makes 1 batch of muffins. I like to make 6 giant ones but you could make 10 or 12 smaller ones depending on your tin.

Remember you only need about 1-2 tablespoons of diced vege so this is perfect for anyone growing their own vegetables and has only 1 little tomato that is ready to eat. Also good for those of you that want to use up a bit of this and a bit of that vegetable.
I made another batch of these things last night I brought 1 to work today. I just ate it and they reheat really well in the nuker. I might just make some more again tonight. It's really easy. Man, if I make muffins again tonight that will be muffin making 3 days in a row and baking 4 days in a row. Crazy!
My flatmate said to me last night (after I gifted him a freshly baked muffin) that he doesn't know what brought on my baking frenzy, but he likes it! :D

I had mixed results. The tuna burgers came out perfectly! although I might have flaked the tuna more...they're kind of chunky.
The marinated chicken was a disaster. I should have pounded them out and used a lower heat. The outside was beginning to char, while the internal temperature was only about 110ºF...nowhere near the 165º it's supposed to be. :( And it smelled so good going into the pan.

San Diego Tuna Burgers
12-1/2 oz. can Chunk Light Tuna, drained and flaked (or two 6-1/4 oz. cans)
1 egg
1/2 Cup fresh bread crumbs
1/4 Cup (1/2 stick) butter, melted
2 Tbl. vinegar [I use red wine vinegar]
1/2 tsp. salt
1/4 tsp. pepper
Combine all ingredients well, and shape into six patties [I make four]. Refrigerate one hour. Preheat broiler. Toast buns and keep them warm. Broil burgers 6 inches from heat 3 minutes per side. Serve on hot toasted buttered buns with onion, and catsup or tartar sauce.
[You also can grill these outside if you use a burger or fish basket. If you really like onion, try grilling Vidalia onion slices. Secure each slice with a skewer to keep their shape. Or top with cheddar or provel cheese. You could also mix some chili powder into the burgers. Very versatile! You also could use Thousand Island dressing for a condiment]

Baked Raisin French Toast
Yield: 1
Ingredients:
1 Loaf raisin bread
6 Eggs
1 cup Half & half
1 teaspoon Vanilla
1/2 teaspoons Cinnamon
1/4 teaspoons Nutmeg
1/4 cups Sugar
~ ---Topping--- 1/4 cup butter or margarine 1/2 cup brown sugar 1/2 cup
chopped nuts
Arrange raisin bread slices in a greased 9" x 13" baking dish, overlapping
the slices lengthwise.
Mix the eggs, Half & Half, vanilla, cinnamon, and nutmeg. Pour over the
bread and sprinkle the bread lightly with the cinnamon and sugar. Cover and refrigerate overnight.
Mix butter or margarine, brown sugar and nuts. Sprinkle mixture over bread. Bake at 350° for about 40 minutes.

This is the simplest treat for kids, family and new friends. In my efforts to explore and compare honey, I needed a foundation to carry the honey from plate to mouth. I decided on using Pepperidge Farm puff pastry.
Of course one sheet made MORE than enough for my taste test. So, I plated up the rest for our friends. The neighborhood kids REALLY enjoyed eating the extras. Our little friend, Eli, called them ‘fancy biscuits’.
HERE’S ALL I DID
one sheet of puff pastry thawed
2 tablespoon unsalted butter
1/4 cup honey
dash of cinnamonBake the puff pastry according to the directions on the package. I cut the sheet with a small biscuit cutter before baking, to get bite size pieces. Set aside baked bites.
In a Pyrex measuring cup, add honey, butter and cinnamon. Microwave on low power or 70% for up to one minute. Just long enough for the butter to melt and the honey is warm enough and easy to stir.
Pour a little honey butter over individual fancy biscuits or pile up a plate and pour all the honey butter over all the fancy biscuits. Serve immediately.

I've been on a smoothie kick lately. A banana, a handful of frozen strawberries, 1/2 cup of 2% milk, 1/2-1 cup yogurt and a teaspoon of sugar, whirled up in the blender.
Tonight I realize there was no protein in my evening meal, so I threw in a good tablespoon of peanut butter.
Niiice! Although any more peanut butter than that would overwhelm the strawberry/banana flavor. :D

Baby Hot Browns
Yield: 1
Ingredients:
1 Chicken bouillon cube
1/4 cups Hot water
3/4 cups Half and half
3 tablespoons Unsalted Butter
2 tablespoons Flour
1 cup Grated swiss cheese
5 Strips of bacon (cooked and
Crumbled)
1 large Onion, sliced thin
6 ounces Cooked turkey, thinly sliced
18 slices Small french bread
Parsley
Dissolve bouilon cube in hot water, and half and half in a saucepan, melt
butter and add flour. Whisk and cook until mixture is frothy and raw flour
taste is gone. While stirring, add the bouillon mixture. Stir constantly
with a whisk until the sauce thickens and begins to bubble. Add Swiss
cheese and stir until smooth (add water and heat if sauce needs to be
thinned) Assemble hot browns by placing turkey and onion on each bread
slice. Top with sauce and crumbled bacon. Heat at 350 degrees for 10
minutes. Garnish with parsley.

Buda, hot browns are like an open faced turkey and bacon sandwich with a cheesy sauce. It was invented at the Brown Hotel in Louiseville Kentucky, and is a favorite fare at the Kentucky Derby. I only heard of them a few days ago and my mouth was watering at the description.

I've lately been watching this cooking show, through Miro, that's out of Australia. What I really like about it is the simplicity of the recipes.
This one (http://aww.ninemsn.com.au/ARTICLE.aspx?id=579009) just really got me going, it sounds and looks so good, and it seems fairly simple to make.

Avocado Stuffed with Smoked Fish (West Africa)
Yield: 4
Ingredients:
4 Hard-cooked eggs *
1/4 cups Milk
1/4 cups Strained fresh lime juice
1/4 teaspoons Sugar
1/2 teaspoons Salt
1/3 cups Vegetable oil
2 tablespoons Olive oil
1/2 pounds Smoked whitefish
2 large Ripe avocados
12 Strips of fresh red bell pepper or canned pimiento **
* the yolks rubbed through a sieve and the whites finely chopped.
** each cut about 1/4 inch wide and 2 inches long.
In a deep bowl, mash the egg yolks and milk together with a spoon or
table fork until they form a smooth paste. Add 1 tablespoon of the
lime juice, the sugar and the salt.
Then beat in the vegetable oil, a teaspoon or so at a time; make sure
each addition is absorbed before adding more. Add the olive oil by
teaspoonfuls, beating constantly. Stir the remaining lime juice into
the sauce and taste for seasoning.
With your fingers or a small knife, remove the skin from the fish and
pick out any bones. Drop the fish into a bowl and flake it finely
with a fork. Add the chopped egg whites and the sauce, and toss
together gently but thoroughly.
Just before serving, cut the avocados in half. With the tip of a
small knife, loosen the seeds and lift them out. Remove any brown
tissue like fibers clinging to the flesh.
Spoon the fish mixture into the avocado halves, dividing it equally
among them and mounding it slightly in the center. Arrange 3 strips
of sweet pepper or pimiento diagonally across the top of each avocado
and serve at once.
Makes 4 servings.

We've had a discussion about American Thanksgiving dinners, especially the sweet potato/yam casserole covered with marshmallows. Here's a very odd variation on that dish, because it amused me.
Sweet Potato Poppers
(by Shirley McNevich)
2 cups cooked and mashed sweet potatoes
1 tsp. salt
1 1/2 TBSP butter
1 TBSP white sugar
large marshmallows
1 1/2 cups crushed corn flakes
1 egg white
Peel 3-4 sweet potatoes--put in cold water in a pot. Add 1 tsp. salt and bring to a boil--once boiling, cook until soft (test with a fork). Drain sweet potatoes and mash the cooked sweet potatoes--measure 2 cups for this recipe. In a large bowl add mashed sweet potatoes, white sugar and butter--stir until mixed. Take one large marshmallow at a time and cover it all over with the mashed sweet potato mixture--set on a plate. Repeat with all marshmallows until you run out of potato mixture. Let them cool to room temperature, then refrigerate for 1 hour. Remove from refrigerator. In a cup, beat the egg white. Crush corn flakes and place them in a bowl. Dip each potato covered marshmallow in the egg white, then roll in the corn flakes. Grease an 8 x 8 baking dish. Place each corn flake covered ball ("popper") in the baking dish so that they are not touching each other. Bake at 400 degrees for 20 minutes or until browned.

Grilled Smoky Cheddar Potatoes
Are you a potato lover? Try this cheesy grilled version.
Prep Time:1 hr 10 min
Start to Finish:1 hr 10 min
Makes:4 servings
4 medium potatoes, cut into 1-inch chunks
1/2 teaspoon salt
2 tablespoons butter or margarine
1 cup shredded Cheddar cheese (4 ounces)
2 tablespoons Betty Crocker® Bac~Os® bacon flavor chips
2 medium green onions, sliced (2 tablespoons)
1. Heat coals or gas grill for direct heat. Place potatoes on 30x18-inch piece of heavy-duty foil. Sprinkle with salt. Dot with butter. Sprinkle with cheese and bacon chips.
2. Wrap foil securely around potatoes; pierce top of foil once or twice with fork to vent steam. Cover and grill foil packet, seam side up, 4 to 6 inches from medium heat 45 to 60 minutes or until potatoes are tender. Sprinkle with onions.

My favorite Summer Salad... so refreshing and crisp:
Broccoli Bacon Salad:
Ingredients:
2 bunches broccoli, florets only (5 to 6 cups florets)
1 medium red onion, chopped small
1/2 cup golden raisins
10 to 12 slices bacon, fried and crumbled
1 cup mayonnaise ... you can use reduced calorie or Miracle whip depending on your tastes .. I'm a Hellman's girl :D
Chop Broccoli into bite size pieces, add onion, bacon and raisins
Stir in Mayo and put in the fridge until you are ready to serve.
Tastes best if made a few hours ahead of time so the flavors meld.
I usually double this recipe to feed my crowd ;)

You can make it any way you like really .. I just love it in this form .. the raisins just set off the flavor.
But I have also added Arugala and croutons to make it more hearty on occasion. I bet egg would be great ... throw in a diced tomato and I bet it would be similar to a BLT ;)

ok if you have a crock pot this is the easiest thing in the world to make and it taste uber good if you like bbq.
shredded bbq chicken
2lbs boneless skinless chicken breast
1 bottle (16 oz) KC masterpiece or whatever sauce you like
1/2 cup brown sugar
3/4 cup finely chopped onion
3 cloves garlic minced
put it in the crock pot for 8 hours on low 4 on high
7 hours in take the chicken out of the sauce and shred it with 2 forks... it just falls apart
put back in for an hour
serve on a bun or how ever you'd like =]

Banana Curry Muffins
Yield: 12
Ingredients:
2 cups Flour
2 teaspoons Baking powder
1 1/2 cups Bran
2 ounces Butter
1 cup Milk
1 teaspoon Curry powder
1 tablespoon Treacle or golden syrup
3/4 cups Mashed bananas
3 tablespoons Sweetened Condensed Milk
1/2 teaspoons Baking soda
Preheat oven to 350oF, prepare pans. Sift flour & b/pdr, stir in bran &
make a well in the centre. Melt the butter, curry pdr, treacle & condensed
milk together. Dissolve the soda in the milk & pour into the dry
ingredients with the butter mixture & the bananas. Stir until just
combined. Spoon into pans & bake for 15-20 mins or until well risen &
golden. Makes 16-18 muffins.

Buda's meatballs and sexy red wine sauce.
Made this up last night and it was kick ass.
Meatballs
400 grams of beef mince (or enough for 2 people)
1 carrot, grated
half an onion, diced
3 cloves garlic, minced
1/4 cup of breadcrumbs
1 egg, beaten
herbs, salt, pepper to taste
Mix ingredients together in a bowl. Make meatballs (the trick is to use wet hands so that the mixture doesn't stick to your hands) and add the meatballs to a hot and oiled pan (that has a lid). Cook about until these are brown on the outside and then add the sauce ingredients.
Sauce
1/4 cup red wine
A glug of each: tomato sauce, soy sauce, balsamic vinegar, chocolate sauce.
(A glug is about 1 or 2 table spoons I think).
A knob of butter
Once the sauce is mixed well in and coating the meatballs, cover with lid and cook on medium heat for about 10 minutes.
Serve with more red wine and pasta.
Serves 2 for a sexy meal.
NB The chocolate sauce was the wildcard. I've seen people use chocolate with meat before so thought "what the hell". It was awesome.

Not my recipe, but with all the savoury muffin talk that's been going on, I had to add this!
Avocado Muffins
Yield: 12
Ingredients:
1/4 cups Margarine
1/4 cups Sugar
1 Egg
1 Avocado; pureed
1 cup Toasted slivered almonds
1 cup Milk
2 cups Self-raising flour
Preheat oven to 400øF & prepare pans. Cream butter & sugar & beat in the
egg. Blend in the avocado & milk & mix in the nuts. Lastly add the flour &
mix gently but thoroughly until the ingredients are moistened & combined.
Place in pans and sprinkle each muffin with topping. Bake for 20-25 mins.
Makes 10-12.
Note: I also add a little grated lemon rind. Almonds may be toasted
quickly in the microwave or in a dry frying pan, stir constantly to stop
burning. These muffins are one of my favourites.

Hasn't worked since we moved in. Didn't notice until more than a month later (we're responsible for maintenance, and our landlord gave us 30 days to report anything that wasn't working properly). We moved in in the summer, so I didn't think to try making a roast, and I don't bake cakes or cookies or anything. Not worth it to me to pay to get it fixed, there's only two of us so a toaster oven is generally big enough for what I try to make. I don't know if muffin pans would fit in there though.
Edit: I also just got a slow cooker/crock pot as a shower gift. I can roast in that. ;)

Oooh, wonder if we all have something similar in stock to cook? Tonight I could do, though I have my recipe planned out (here's the recipe if anyone wants to try it), Thursday and Friday I'll be gone around dinner time. :(
This is what I was going to make:
Penne with ground turkey, artichoke and tomatoes
1 lb ground turkey (or ground beef, or even chicken, or go veggie!)
1 box whole wheat (or regular) penne pasta
1 can or jar of artichoke hearts, drained, but keep a little juice from the bottom (Trader Joes makes the best for this recipe)
1 med size can of chopped, whole or stewed tomatoes
tons of garlic
oregano, basil (dried or fresh)
1 onion
romano cheese (I like the whole block Pecorino Romano best)
Saute turkey in a skillet with garlic, onions, spices and salt and pepper to taste.
Boil penne
When turkey is browned, throw in artichokes with the little bit of juice, and tomatoes. Cook down until artichokes and tomatoes are cooked. You can also add a glug of wine.
Toss turkey/artichoke/tomatoes over pasta
Top with romano cheese and salt/pepper as needed.

I actually make something similar to that, but with chicken sausage (out of the casing, so it's kinda like a chunky pre-seasoned ground chicken) and broccoli and fresh tomato. And LOTS of fresh garlic and olive oil. I don't think the fiancé likes whole artichokes though, I think I've seen him eat the dip though.
Tonight I'm already planning a beef stir fry. The only veggies I have in the house are carrots, so I have to shop for a couple more things. Now that I think about it, I have frozen peas and eggs, so I might just skip the shopping trip and make fried rice. Might try out the new stir-fry pan I got at my shower!! :)

That's odd. Our oven stopped working last night. I went to put a pie in the oven and it wouldn't turn on. The stove was fine though. So I ended up scooping out the mixture and frying it and then cooked some pasta with it.
I love using the oven. I use it a lot. Must tell the landlord, but I wonder if he will buy us a new oven since we're moving out in a few weeks. I guess he would need to because he'll still have new tenants that will want an oven.

Apple-Peanut Butter Popover Pancake
Yield: 6
Ingredients:
1/4 cups Peanut butter
2/3 cups Water
1 cup Bisquick original baking mix
4 Eggs
3 small Apples; thinly sliced (about 2 cups)
3 tablespoons Margarine or butter
1/4 cups Sugar
HEAT oven to 400 degrees. Generously grease rectangular baking dish or
pan, 13x9x2 inches. Heat peanut butter and water to boiling in 2-quart
saucepan, stirring occasionally. Add baking mix all at once. Stir
vigorously over low heat about 1 minute or until mixture forms a ball;
remove from heat.
BEAT in eggs, two at a time, with spoon; beat until smooth and glossy
after each addition. Spread in pan (do not spread up sides). Bake 30 to 35
minutes or until puffed and center is dry.
COOK apples and margarine in 10-inch skillet 2 to 3 minutes or until
apples are slightly tender. Sprinkle sugar over apples. Cut pancake into 6
squares. Top each pancake with apple mixture. 6 servings.

1c flour
1c sugar
1c oats
1c butter
1tbsp honey
1tbsp hot water
1/2 tsp baking soda
mix flour, sugar and oats in a bowl, melt butter, honey and water very gently, dont get it too hot, pour onto the dry ingredients, mix well and form into balls the size of walnuts, put on a greased tray and flatten with a fork dipped in cold water
bake 350 degrees, 15 mins, leave on the tray a minute then put to cool on a rack
you can also add chopped almonds, cinnamon or ginger
makes about 45 biscuits from the mix

Anti-Vampire Popcorn
Yield: 1
Ingredients:
1 Bag Pillsbury Microwave popcorn
2 cups Crisp wheat square cereal
2 cups Chedar cheese-flavored goldfish crackers
1 3/4 ounces Can shoestring potatoes
1 cup Unsalted peanuts
1/2 cups Margarine or butter
1 teaspoon Dried parsley flakes
1/2 teaspoons Chili powder
1/4 teaspoons Onion powder
1/4 teaspoons Garlic powder
1/2 cups Grated Parmesan cheese.
MICROWAVE INSTRUCTIONS: Prepare popcorn as directed on the packaged. Remove any unpopped kernels. In a large bowl, combine popcorn, cereal, crackers, shoestring poatoes and peanuts.
Place margarine in a 2-cup microwave-safe measuring cup. Microwave on high for 1 to 1 1/2 minutes or until melted. Stir in parsley flakes, chili powder, onion powder, and garlic powder. Drizzle seasoned mixture over popcorn mixture. Sprinkle with cheese. Toss until evenly coated. Transfer half of mixture to ungreased 12x8 inch microwave safe dish. Microwave on HIGH for 3 minutes or until thorougly heated, stirring once halfway through heating. Spread on paper towels to cool. Repeat with remaining mixture.
Makes 12 cups.
The garlic in this popcorn keeps vampires from getting too friendly!
Another way people used to keep vampires away was to scatter mustard seeds on their roofs. Supposedly if a vampire saw some mustard seeds he would have to stop and count each one. People scattered so many mustard seeds on their roofs that it would take all night for the vampire to count them. By that time it was dawn and the vampire had to return to its grave.

I don't know why I've never thought of this, I mean, there's chicken, beef, pork and shrimp fried rice! Why not...
Bacon Fried Rice
Yield: 4
Ingredients:
1/2 pounds Raw bacon; cut in 1/2" pieces
2 Eggs
3 tablespoons Vegetable oil
3 cups Cold cooked rice
1 1/2 tablespoons Soy sauce
1/4 cups Green onions; in 1/4" pieces
Fry bacon in wok or frying pan until crisp. Drain bacon on paper towel. Beat eggs until yolks & whites are thoroughly mixed. Heat 1 Tbs oil & pour in the beaten eggs. When slightly firm, remove from pan. Heat remaining oil in skillet. Add rice & toss about 2 minutes until oil & rice are well mixed. Add soy sauce & mix thoroughly. Add onions, eggs & bacon bits, breaking up eggs with a spatula. Mix well. Serves 4. (May be frozen for several wweeks. Thaw to room temperature. Warm in 250 degree oven for 20 minutes.)

Bacon Roll Ups
Yield: 1
Ingredients:
1 pound Bacon (20 strips)
20 slices White bread
20 slices American cheese
Remove crust from bread and reserve for another use Arrange 1 slice of
cheese on each slice of bread Gently roll each of the the bread/cheese into
a tube (you will need to press on the bread to help it roll well and hold
together) Starting at one end of bread/cheese roll...wrap the bacon slice
around the roll overlapping slightly as you roll up. Try to cover the
entire surface of the bread Broil from 8 to 12 minutes turning for equal
browning Cool slightly to touch
This little tid bit goes real well with soup and can be re-heated.

Great idea!
I made soup last night. The first bowl was ok, but by the time we had our 3rd bowl each, the flavour was amazing. It's just so hard to wait until it's really done because it smells so good. We had 2 lamb sausages which I sliced and chucked in, potato, onion, mushroom, tomato, carrot and peas. It was pure un****edwith nourishment.

I know what you mean, buda...I always try to leave soup for a day to let the flavors fully develop. Also caseroles like lasagna always seem to taste better the second day.
It's hard to wait, though! :D

Asparagus, Brie and Bacon Muffins
Yield: 1
Ingredients:
12 Asparagus spears; cut in half
2 Red peppers; quartered roasted, peeled
2 tablespoons Olive oil
2 tablespoons Chopped fresh basil
2 tablespoons Dijon-style mustard
1 teaspoon Crushed garlic
4 Bays english muffins; lightly toasted
8 slices (1 ounce each) canadian bacon; cooked
8 ounces Brie cheese; cut into 1/8-inch slices
Basil leaves for garnish
Cook asparagus in rapidly boiling water until tender, about 5 minutes,
drain/ Cut roasted peppers into thin strips. In small bowl, whisk together
oil, basil, mustard and garlic. Brush on muffin halves. Place on ungreased
baking sheet. Layer bacon, red pepper, asparagus and Brie evenly over
muffins.; Broil 6 inches from heat until Brie melts, about 1 minute Garnish
with basil leaves. Serve immediately. Serves 8
Notes: Melted Brie and a pungent, basil-laced vinaigrette team up with
garden- fresh asparagus and Canadian bacon for this brunch alternative.

More bacony goodness...(but my favorite is still raw sliced, seeded jalapeño peppers filled with peanut butter!)
Bacon Wrapped Jalapeño Poppers
Yield: 12
Ingredients:
1 2 pounds fresh jalapeño peppers
1 2 8oz. cream cheese*
1 pound Bacon** (each slice cut in half)
Split, seed and wash jalapeño peppers. Spread cream cheese in each half of
split peppers, either leave in halves *OR* combine the two halves to make a
whole popper. Wrap each half/whole jalapeño with a bacon slice cut in half.
Place each bacon wrapped jalapeño on a cookie sheet..bake at 250 til bacon
is done, cool and serve.(Cheese will boil out if oven is set too high)
This is even better cold the next day!!! I should have posted these for
Super bowl Sunday...good with beer,wine and margaritas.
*I have used fat free and low fat cream cheese, the amount varies as to how
much cheese each individual likes in their jalapeño. **I use Turkey bacon
for the wrap and it is really good, less fat too.
