More bacony goodness...(but my favorite is still raw sliced, seeded jalapeño peppers filled with peanut butter!)

Bacon Wrapped Jalapeño Poppers
Yield: 12
Ingredients:

1 2 pounds fresh jalapeño peppers
1 2 8oz. cream cheese*
1 pound Bacon** (each slice cut in half)


Split, seed and wash jalapeño peppers. Spread cream cheese in each half of
split peppers, either leave in halves *OR* combine the two halves to make a
whole popper. Wrap each half/whole jalapeño with a bacon slice cut in half.
Place each bacon wrapped jalapeño on a cookie sheet..bake at 250 til bacon
is done, cool and serve.(Cheese will boil out if oven is set too high)

This is even better cold the next day!!! I should have posted these for
Super bowl Sunday...good with beer,wine and margaritas.

*I have used fat free and low fat cream cheese, the amount varies as to how
much cheese each individual likes in their jalapeño. **I use Turkey bacon
for the wrap and it is really good, less fat too.
I think I just died and went to bacon heaven.

Here's one we used to serve at a restaurant. I like their ideas for sandwiches:

Brown Sugar Bacon


Try these sweet-salty strips in a BLT, a grilled cheese-apple slice sandwich, or crumble over salads. We recommend only using the oven for this recipe, as we couldn't get the same results in the microwave.

Ingredients

1 pound thick bacon slices
1 1/2 cups firmly packed dark brown sugar

Preparation
Arrange bacon in a single layer in an aluminum foil-lined broiler pan. Cover evenly with brown sugar.

Bake at 425° for 25 minutes or until done. Quarter each slice; let stand 2 to 3 minutes or until sugar is set.

Black Pepper-Brown Sugar Bacon: Press 1/4 cup cracked black pepper onto bacon slices before covering with brown sugar. Proceed with recipe as directed.

Cripes...I have two blossoms on my tomato plants. Half my seeds never even sprouted either. It's a horrible garden year here.

oh man my tomatoes are blooming now. i have one roma plant and i forget the other plant but it puts off the normal fat sandwich tomatoes. i did a smal garden this year only 5 plants because it was just to much work last year and i didn't use all the veggies i got. the other plants i have going are cucumber, poblano pepper, and some other sweet mexican pepper. i can't wait till the poblano starts producing mmm they are so good roasted

Ooooh, I love poblanos both fresh and roasted. Where did you get your poblano plants? No one around here had any for my garden. :( Guess I'll have to order them next year.

I've got a good recipe for salsa/sauce using roasted poblano and chipotle peppers. I'll post it later when I get a chance. It's good on enchiladas or grilled chicken (I even use it as a thin salsa for chips).

ooooo salsa/sauces recipes are always good! i have a small jalapeno plant growing too but i don't know how well its going to do, something chewed a few branches off it and it hasn't really came back yet but it does have one pepper on it though =]

That one sounds really good, too! Does anyone have any advice for selecting and cooking shrimp? The last time I did, they came out like balls of rubber, I think I over cooked! Haallp! :)

Yeah it's easy to overcook shrimp. If you're cooking them in a skillet with a little oil they just need a couple minutes per side. Rubbery is sure sign of overcooking.

yea shrimp are usally done in about 4-5 mins any longer than that and they turn into something that isn't fun to eat. as for picking the shrimp it all depends on what you are doing with them. i like them around 30-40 count for cooking and 20 count or so for grilling/ shrimp cocktail.

Ok, here's my recipe for the sauce. I've combined several recipes to make this, and it's always on the fly so feel free to improvise.

Put in blender and blend until mostly smooth:

6 or so tomatoes, broiled then dunked in cold water to remove skins
3-4 cloves garlic
2-3 dried chipotle chilis, stemmed and deseeded and soaked in hot water to soften (or you can leave some seeds to increase heat level)
2-3 ancho peppers, also stemmed, deseeded and soaked
fresh cilantro
Salt to taste
handful of toasted almond slivers (you can pre-puree these if you want it to be smooth)Transfer to a small saucepot and add:

1/2 cup or so brewed dark roast coffee
pinch of cumin
Ibarra chocolate (which has cinnamon and almonds in it, or if you can't find, which I can't usually you can throw in a pinch of semi sweet chocolate, or even about 1/8-1/4 tsp of dark unsweetened cocoa powder and a pinch of sugar, and then add a very small pinch of cinnamon)
Salt more as neededHeat until chocolate is melted or blended in. Either serve warm, or cool down for a salsa.

I'm making fajitas tonight and throwing this sauce on it. You can also use it as an enchilada sauce, or even with corn chips alone.

Oh, yeah! I bet beer replacing coffee would be interesting too. If you try it let me know how it turns out! This recipe is great because you can take out what you don't want and add what you want. The chilis and tomatos are the base for what ever. You can even use different chilis.

That sauce does sound good! I'd have to make it out of view of my wife. She's not very adventurous in the food department and seeing things like coffee and chocolate going into it would probably pre-prejudice her against it.

I bet that would do the trick if you could mount it in such a way that they couldn't climb the pole or jump to it from something else.

I've got quite a few squirrels around. My yard is a hotspot because I'm seemingly one of the few non-dog owners in the neighborhood. The tree rats snag a few, but not enough to make a dent. Actually, I think it's kind of funny when I see one lodged WAAAY up in a tree. :)

My main tomato predators are birds and ants.

my parents have one growing and it seems to be doing good so far. its growing slower than the other plants they have going but its growing. i haven't seen any tomatoes on it yet but it shouldn't be too much longer now me thinks :D maybe i'll snap a picture of it when i go over there next time.

i made this last week and it was AWESOME!!!

Parmesan Chicken Recipe

Ingredients

1 clove garlic, minced
1 stick unsalted butter (1/2 cup or 1/4 pound), melted
1 cup dried bread crumbs
1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
2 Tbsp chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
A large pinch of Italian seasoning (herb mix)
1/8 teaspoon ground black pepper
2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches

Method

1 Preheat oven to 450°F.

2 In a bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.

3 Place coated chicken pieces on to a 9x13 baking dish. Try to leave a little room between each piece. Drizzle with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear. Note that the chicken will get much more browned on the bottom side than on the top.

Serves 4-6.

i added a little crushed red pepper to spicy it up a little bit and severed it with spaghetti and tomato sauce. very very tasty :D

Invented this last night to get rid of some leftover white rice. Not quite sure what to call it, I guess it's some kind of burrito. Remember, I do not measure. All measurements are approximate.

• ~ 1 lb. chicken breast, cut into small, short strips
• ~ 1.5 cups cooked white rice
• ~ 1 cup frozen corn
• ~ 1.5 tbsp tomato paste
• ~ 1 tbsp sofrito
• 1 can diced tomatoes, most liquid removed
• 1 small jar green chilies, most liquid removed
• 1 small jar pimientos, most liquid removed
• 1 small link chorizo, casing removed, chopped
• 1 tbsp. vegetable oil
• ~ 1 tbsp. garlic powder
• ~ 1 tsp. paprika
• ~ 1 tsp. chili powder
• ~ 1 tsp. dried cilantro flakes (or 1/4 cup chopped fresh)
• ~ 1/2 tsp. red pepper flakes
• ~ 1/2 tsp. ground cumin
• Salt and black pepper to taste
• flour tortillas (I used multigrain cuz I'm freaky like that)
• Shredded cheese (I used Sorrento's light Mexican)

Pour oil into sautee pan over medium high heat, add chorizo. Let fat from chorizo render out a little, but don't let it burn. Add sofrito, tomato paste, seasonings, let simmer about 2-3 minutes. Then add chicken. When chicken looks almost cooked (about 5 minutes), lower heat to medium and add green chilies, pimientos, frozen corn and diced tomatoes. Stir well, let simmer another 5-7 minutes. Then add cooked rice, making sure to break it up as well as you can and getting all of the rice coated with the sauce and seasonings. Cover and allow to simmer for about 5-7 minutes on low just to make sure rice gets hot and flavors blend. Mix occasionally to ensure nothing sticks to the bottom and burns. Heat tortillas in microwave between damp paper towels for about 30 seconds (for 4 8" tortillas). Then fill, add cheese, wrap and enjoy!

My all time favorite meal is chick peas and rice.
The kids all love it (very rare)
It's super healthy
It's dead simple to make
It's economical (very cheap!)

This is what I do (I don't measure usually either)
Heat up a good sized dollop of olive oil in a bigish pot
add about a cup of brown rice and a chopped onion, cook until the onion is almost cooked and the rice is lightly toasted.
Add a can of broth (veggie, chicken etc.) and a can of water, or home made broth if you have it.
Chop up and add veggies (carrots, celery, brocc, cauli, peas etc)
add a can of chick peas (or presoaked dried ones).
Add desired herbs & spices
Cover and cook for about 30-40 min, until rice is cooked.

It's great reheated too!

(there is a theme to my favorite recipes ;)

You can make a fancy crust, but I usually buy a premade graham crust.
Melt about 1 half to 1 whole package of chocolate chips (I use semi sweet)
puree 2-3 avocados, with a tsp of vanilla & a tsp of lemon juice
Combine.
Pour in crust.
Chill.
Done!
It is the most delicious, most rich chocolate pie ever!
I added some cream cheese once and it was a little lighter, and still super amazing!

Bean Patties
Yield: 4
Ingredients:

16 ounces Pinto beans, rinsed, drained
1/2 cups Shredded lowfat cheddar
1/4 cups Dry bread crumbs
2 tablespoons Chopped gr onions w/tops
1 teaspoon Worcestershire
1/4 teaspoons Pepper
1/8 teaspoons Salt
1 Egg white or 2T egg product
4 Whole wheat hamb. buns
4 Slices tomato
4 Lettuce Leaves
1/2 cups Plain nonfat yogurt
2 teaspoons Prepared horseradish
Spray 10 inch nonstick skillet with nonstick cooking spray. Mash beans in


med bowl. Mix in cheese, bread crumbs, onions, worcestershire, pepper,
salt and egg white. Shape into 4 patties. Cook in skillet over med heat
about 10 mins, turning once until light brown. Serve on buns with
horseradish sauce, tomato and lettuce. Per serving--280 calories, 14 gr
protein, 5 grams fat, 0 cholesterol, 790 milligrams sodium, 3 grams
saturated fat, 2 grams unsaturated.

I made this, but didn't follow the directions correctly, but I still loved it. Be sure to let the corn rest though as it says.

Best Ever Grilled Corn on the Cob


I don't get an invite to any family or friend bar-b-cue without the request that I be "in charge" of the corn!! Once you've tried this corn I know you'll agree. Grilling brings out the sweetness of the corn along with the smoky kick of the chili powder and bacon. Delicious!!
Ingredients

12 ears corn on the cob, with husks -that's the part I skipped
12 slices thin, lean bacon
3 Tbs. fresh ground black pepper
3 Tbs. chili powder
12 pieces of foil approximately 12in.x12in.
Directions

Pull off dry outer husks of corn and discard. Hold ear of corn by the cob and pull husks down to reveal corn. Remove corn silk while running corn under cold water. Dry corn and rub with chili powder and black pepper. Wrap bacon slice around corn. Pull husks back over corn and wrap whole ensemble with foil. Grill over hot coals approx. 15 minutes turning frequently. Let corn relax in foil for 20 minutes. Remove foil, husks and serve!
Serving Size

8-10
Preparation Time -30 minutes
Cooking Time - 15 minutes

Yea...I think I'll be picking up some more corn and bacon today. I'd recommend getting the thinner bacon though. It wraps better. I think it would be fun to tweak some of the spices on this too! Cumin? Come to think of it, I used ground Chipotle pepper. Sage? Yummo!

Baby Cheesecakes
Yield: 1
Ingredients:

8 ounces Cream cheese; at room temp
3/4 cups Granulated sugar
1 large Egg
1 cup Sour cream
1/4 cups All-purpose flour
1 teaspoon Vanilla


Pre-heat oven to 325F. Lightly coat mini-muffin pans with vegetable oil
cooking spray (PAM) Combine the cream cheese,sugar, and egg in a mixing
bowl or in a food processor. When well mixed, beat in the sour cream,flour,
and vanilla. Fill muffin tins almost to the top and bake for about 20
minutes. The filling will have puffed up a bit. Let cool in the pans for an
hour and then refrigerate for a few hours. Remove from pans with a small
flexible knife. Yields 24 1/4 cup cheesecakes. Flavor variations: Add juice
of two limes. Add 2 tsp. orange zest and 1 Tbsp. orange liquer or essence.
Add mini chocolate chips. Add fruit preserves or jam. Raspberry is
especially nice. Garnish with fresh fruit and/or whipped cream.

Found this recipe that's just different enough from my usual to make me try it. :D

Arcadian Shepherd's Pie
Yield: 6
Ingredients:

1 1/2 pounds Ground beef
3 tablespoons Butter
1 teaspoon Worcestershire sauce
2 EGGS, SEPARATED
1/2 cups Butter
8 Potatoes peeled, boiled mash
2 Onions, Minced
1 tablespoon Tomato catsup
Beef stock
1/2 cups Cream
1/8 teaspoons Garlic powder
Parmesan cheese


Brown beef and saute onions in butter untill golden. Mix meat with onions,
catsup, Worcestershire, salt & pepper. Add a litter meat stock and cook,
covered, over low heat for 15 to 20 minutes. Beat egg yolks untill light,
whites untill stiff. Beat yolks, cream, butter, and garlic powder into
mashed potatoes. Gently fold in beaten egg whites. Put meat mixture into
casserole and top with potatoes. Sprinkle with Parmesan cheese and bake at
350F. untill puffed and browned.

Interesting, buda...regardless of meat, they're all called Shepherd's pie in the States.

What I'd really like to find is a proper recipe for pastys. I know there's the Cornish kind, and a similar kind from Wisconsin. And they seem to be similar to empanadas. I just like meaty stuff covered in bread or potatoes, I guess. ;)

marinated cucumbers and red onions

3-4 cucumbers sliced about a 1/4" thick
1 medium red onion sliced thinly into rings
1/2 cup warm water (helps melt the sugar)
1/2 cup sugar
1/2 white vinegar
black pepper to taste

i mix the liquids, sugar, and pepper in a plastic storage container first then dump all the cut up cucumbers and onions in and give it a good shake. let it sit over night or for as long as you can wait in the fridge. you may need more marinade if so just make sugar the sugar, water, and vinegar are all the same and you'll be good! you can reuse the marinade too but you might want to add a bit more sugar.

Funny, I've never heard it referred to as Cottage Pie, but I knew a true Sheperd's Pie was made with lamb.

Walnut Phyllo Rounds
Yield: 6
Ingredients:

1 pound Phyllo pastry
1 cup Butter, melted
FILLING
1 1/2 cups Walnut pieces
1/2 cups Pistachios or slivered almonds
1/4 cups Chopped candied orange peel
1/4 cups Granulated sugar
1 tablespoon Orange blossom water, or 1 tsp almond extract
1/2 teaspoons Each, ground cinnamon and cloves
Syrup
1 Lemon
2 cups Granulated sugar
1 1/2 cups Water


FILLING; In food processor, combine walnuts, pistachios, candied peel,
sugar, orange blossom water, cinnamon and cloves; process until finely
chopped.

Place one sheet of phyllo on work surface, covering remaining phyllo with
damp tea towel to prevent drying out. Brush sheet with some of the butter.
Top with another sheet of phyllo; brush with butter. Repeat with 2 more
sheet of phyllo and butter. Sprinkle with about 1/3 cup of the nut
mixture. Top with 3 more sheets of phyllo, brushing each with butter;
sprinkle with 1/3 cup of the nut mixture. Repeat with 3 more sheets, then
nuts to make a total of 9 sheets of phyllo.

Brush the long edges of dough with butter. Starting at long side, tightly
roll up jelly-roll fashion. Brush all over with butter; trim edges. Cut
into 3/4 inch thick slices; place on greased baking sheet. Repeat with
remaining phyllo and filling to make second roll. Bake in 350 oven for 18
to 20 minuts or until crisp and golden, turning over halfway through. Let
cool for 5 minutes on baking sheets. Remove to racks set on baking sheets.

SYRUP: Meanwhile, using vegetable peeler, peel lemon into thick strips. In
saucepan, combie sugar, water and lemon rind; bring to boil. Reduce heat to
medium-low and simmer for 25 to 30 minutes or until syrupy; strain. Spoon
half of the hot syrup over phyllo rounds; let stand for 15 minutes. Spoon
remaining syrup over top; let cool completely. Makes about 42.

Drumsticks Parmesan

This is a recipe the kids can help with and it is fun and just wonderful for pick-nicks and get together.

Ingredients:

1 cup crushed packaged herb stuffing mix
2/3 cups grated Parmesan cheese
1/4 cupped chopped parsley(dried Parsley does great also)
1 clove garlic,minced
8 drumsticks
1/3 cup melted butter

Directions:

Combine stuffing mix,Parmesan cheese,parsley and garlic.Dip drumsticks in melted butter then roll in crumb mixture.Place pieces skin side up and not touching in a greased jelly roll pan.Sprinkle with remaining butter and crumbs.Bake about 1 hour in a 375* oven until done.Do not turn the drumsticks.


This is a recipe I like to change up,and the kids just have so much fun dipping and rolling the chicken legs.Just make sure you clean all surfaces including the kids after this one.

If you do not want to dip the drumsticks in butter,because you don't want all the fat try low fat buttermilk,it works great and gives the drumsticks a little kick.

A 14-Minute Maple Candy
Yield: 6
Ingredients:

4 cups Maple sirup
1 cup Cream
1/4 cups Butter
1 cup Nut meats, chopped
1 teaspoon Lemon extract


Cook the maple sirup, cream, and butter for 9 minutes after the boiling
point is reached. Remove from heat, add the nut meats and extract and stir
for 5 minutes. Pour into buttered pans and when cool, cut into squares.

Strawberry Surprise Freezer Jam

Ingredients:

1 pt boxes of fresh strawberries, washed, drained and hulls removed
2 1/2 C of fresh pineapple, peeled and finely chopped
7 C sugar
2 pkgs (1 3/4 oz) powdered pectin
1 C cold water
4 pt freezer containers with lids

How to Make It:

Place strawberries in a large mixing bowl.
Crush the strawberries with a potato masher.
Measure out 2 1/2 C strawberries and place in a separate bowl.
Add the pineapple to the strawberries.
Slowly add the sugar and stir until well combined.
Place the cold water in a saucepan over medium heat.
Add the pectin.
Stir continuously until water begins to boil.
Boil 1 minute.
Remove from heat.
Pour the water mixture into with the fruit.
Stir well to combine.
Continue stirring 4 minutes.
Pour into the pt freezer containers and cover.
Let stand at room temperature for 24 hours.
Freeze after 24 hours.
Jam will stay good in the freezer for up to 6 months.
To use, remove from freezer and allow to come to room temperature, about 1 hour.
Cover and refrigerate for up to 3 weeks.

Bass with Avocado Sauce
Yield: 4
Ingredients:

1 small Ripe Avocado; coarsely chopped
1/4 cups Skim milk
1 tablespoon Lime juice
1 Clove garlic; minced
1 dash Hot sauce
2 tablespoons Lemon juice
1 tablespoon Light soy sauce
1 teaspoon Lemon rind; grated
1 teaspoon Dijon mustard
16 ounces Bass Fillets
1/3 cups Fine dry bread crumbs
Vegetable cooking spray


Combine the first 5 ingredients in a blender; cover and process until
smooth. Set mixture aside. Combine lemon juice and next 3 ingredients in a
shallow dish; dip fillets in lemon juice mixture, and dredge in bread
crumbs. Place on a baking sheet coated with cooking spray. Bake at 450øF
for 7 minutes; turn fillets over, and bake an additional 7 minutes or until
fish flakes easily when tested with a fork. Transfer fillets to a serving
platter, and top with avocado sauce.

Alternate Fish: Jumbo Cod, Orange Roughy, Grouper.

Yield: 4

1 tablespoon Sesame oil or chili oil
2 Cloves garlic, minced
1 tablespoon Grated fresh ginger root
1 teaspoon Cornstarch
1/4 cups Soy sauce
2 tablespoons Orange Juice
1 tablespoon Rice or white vinegar
1 tablespoon Sherry, sake or mirin
1/4 pounds Snow peas, ends trimmed
1/4 pounds Fresh mushrooms, sliced
2 Carrots, peeled and thinly sliced
1 pound Soba noodles, fettuccini or ravioli, cooked according to package


This deep mahogany sauce with snow peas, mushrooms and carrots turns soba
noodles, fettuccini or ravioli into a delicious Asian pasta primavera.
Combine oil, garlic, and ginger root in 2 quart microwave safe casserole.
Microwave, uncovered, on high for 45 seconds. Combine cornstarch with soy
sauce in small bowl and stir until smooth. Add soy sauce mixture to garlic
ginger, along with orange juice, vinegar and sherry. Mix well. Microwave,
uncovered, on high until boiling and slightly thickened, 2-3 minutes,
stirring after 1 minutes. Stir after cooking until sauce is smooth. Add
snow peas, mushrooms and carrots. cover tightly with lid, or plastic wrap

Interesting. I remember when I was a kid they had some berries during a tour at Kiwifruit Country (yes, it's a tourist attraction apparently) and I believe the berries had the same effect. I wasn't allowed one at the time though.

Buda's Roast chicken with white wine/onion/garlic gravy

This recipe serves 2 hungry beasts.

Ingredients
2 tablespoons of oil
2 chicken thighs
1 onion, diced
3-5 cloves of garlic, roughly chopped
1 cup white wine
splash of soy sauce
salt
pepper
any herbs you have lying around
1 tablespoon plain flour

Preheat the oven to 200 degrees C. (390F)

Add the oil to a hot pan and fry the chicken and onion for 5 mins until it's got a bit of brown colour. Flip chicken once. Add the garlic (1 minute) and then add the wine. Simmer for a few minutes until much of the wine has reduced (or been absorbed).

Tip everything into an overproof dish, season the chicken with salt, pepper, herbs and soy sauce and bake in the oven for 30 minutes. (This is now the time to prepare your mash or rice or peas etc)

Remove the chicken and put on plates and pour the remaining onion, garlic and wine into a saucepan. Simmer gently and whisk through 1 tablespoon of flour to thicken the gravy. Once flour is stirred in, it's ready. Pour the divine gravy over the chicken and whatever else you are serving.

I served with peas and rice, but you could also use mash and salad or whatever else. Rice is great because it soaks up plenty of gravy.

Toms Crazy Cajun Dogs...

Hot dogs (how ever many you want). Slice length wise, marinade in Worcester sauce for about 15 minutes. Grill, add Cajun spices while grilling. remove from grill, apply to bun with BBQ sauce (I used a splash of honey as well). Top with kraut.

Sorry, buda, I should have caught that. I checked some other recipes, and at 350 F the times ranged from 45 minutes to 1-1/4 hours, with a lot being an hour even. Many suggested an internal temperature of 160 F, and most said the inside should no longer be pink. Hope that helps a little!

i usually make a 1 1/2 pound meatloaf and it's usually done in about an hour.

I do think it's strange there's no ketchup on top...

doesn't mean you can't put it on! that's my favorite part mmmmmm now i want meatloaf.

Let me know how the meatloaf is...that sounds great! I have a hard time with meat loaf unless it's my mom's. I haven't been able to perfect hers yet, but I'm close. The trick is to add a little brown sugar and some ground or rubbed sage. With that apple one, that would be heaven.

Here's a glaze for grilled salmon I mentioned in a recent thread.

Glaze for Grilled Salmon3 tablespoons (packed) dark brown sugar
4 teaspoons prepared Chinese-style hot mustard or Dijon mustard
1 tablespoon soy sauce
1 teaspoon rice vinegar
2 7-to 8-ounce salmon steaks (about 3/4-inch thick)

Prepare barbecue (medium-high heat). Combine brown sugar, mustard and soy sauce in medium bowl; whisk to blend. Transfer 1 tablespoon glaze to small bowl; mix in rice vinegar and set aside. Brush 1 side of salmon steaks generously with half of glaze in medium bowl. Place salmon steaks, glazed side down, onto barbecue. Grill until glaze is slightly charred, about 4 minutes. Brush top side of salmon steaks with remaining glaze in medium bowl. Turn salmon over and grill until second side is slightly charred and salmon is just opaque in center, about 5 minutes longer. Transfer salmon to plates. Drizzle reserved glaze in small bowl over salmon and serve.

Getting near to autumn...when I put a pot of soup on each weekend!

5-Minute Broccoli Soup
Yield: 4
Ingredients:

1 Frozen chopped broccoli; 10
1 1/2 tablespoons Butter
3 tablespoons Onion; finely chopped
2 tablespoons Flour
2 1/2 cups Milk
1 teaspoon Salt
1 cup Grated white cheddar cheese
1 tbsp flour
1 pinch Cayenne pepper; to taste
1/8 teaspoons Nutmeg

Preparation Time: 0:05 Cook broccoli
according to pkg directions, but omit salt and add onion. In a large
saucepan over medium high heat, melt butter, cook 1 minute. Add the 2 tbsp
flour, whisk 1 min. Slowly whisk in milk and salt until smooth and boiling.
Add broccoli and grated cheese, continue to whisk. Bring to a boil. Season
with cayenne and nutmeg if desired.

I used to make broccoli soup really similar to that soup but with fresh broccoli. Unfortunately I seem to have mild lactose issues, that much milk and cheese together is too much for me, if I add a can of chicken stock that helps.

I have the basic KitchenAid model, which comes with a blending jar and lid. I highly recommend it! There also are optional whisk and chopping bowl attachments, but I already have equipment to do that. ;)

Breakfast Bake

cook time 3-3.5 hours (low) 2-2.5 (high)

3-4 cups diced brusty bread 1" dice
1/2 pound crispy bacon cut into 1/2" pieces
2 cups sliced mushrooms
2 cups fresh spinach
8 eggs
1/2 cup milk
3/4 cup roasted red peppers, drained and chopped
1 cup shredded cheese what ever cheese your heart desires :)
salt and pepper to taste

1. Spray the crock-pot with nonstick spray

2. cook the bacon till crispy save 1-2 tablespoons drippings to saute the spinach and mushrooms for about 1-2 mins or until the spinach is wilted

3. beat eggs put in cheese, salt and pepper

4. cover and cook

my gf doesn't like mushrooms so they aren't in mine and i used fresh green peppers instead of roasted red peppers i just sauted them with the spinach for min. i might have put a little more bacon and cheese in mine too :D

i'll let you know how it turns out =]

Avocado Shrimp Boats
Yield: 4
Ingredients:

2 Soft avocados, peeled,
Halved, seeds removed
2 cups Shredded lettuce
2 cups Cooked shrimp, shelled and
Deveined
1 cup Alfalfa sprouts
16 Cherry tomatoes halved
Parsley for garnish
1 Lemon cut into wedges
French dressing


1) On 4 salad plates, place avocado halfon bed of shredded lettuce, spoon
1/2 c shrimp into cavity of each.

2)Arrange alfalfa sprouts and tomatoes on plate next to avocado.

3) Garnish shrimp with parsley and lemon wedges. Serve french dressing on the side.

Fig’s Cheese Muffins

1 1/2 cups flour
1 1/2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
3 cups shredded colby-jack cheese
1 cup milk
1 egg
1/4 cup (1/2 stick) melted butter (I used salted)

Whisk together dry ingredients, then stir in cheese.

In a separate bowl, whisk egg, milk, and butter together. Pour milk mixture into dry ingredients and stir with a spoon to combine.

Bake in greased muffin tins at 375 degrees for 20-25 minutes.

Makes 12.

Basque Potato Pie
Yield: 6
Ingredients:

3 medium Potatoes
3 tablespoons Butter
1/4 teaspoons Salt
1/2 cups Chopped onion
1 pound Ground beef
3/4 cups Tomato sauce
3/4 cups Shredded sharp cheddar cheese
1/3 cups Pitted black olives; sliced


Pare potatoes & slice crosswise as thinly as possible using food processor
or sharp knife. Melt butter in large skillet & add salt. Toss potatoes in
butter to coat evenly. Line bottom & sides of a 9-inch pie plate with
potato slices, reserving 8 slices as garnish. In same skillet, saute onions
until golden. Add beef & cook until browned, breaking up with fork as it
cooks. Add tomato sauce, cheese & black olives. Mix well. Spoon meat
mixture into potato-lined pie shell. Garnish with remaining potato slices.
Bake at 350 for 35-40 minutes or until potatoes are soft & edges are
lightly browned. Allow pie to stand 5 minutes before serving.

Apple and Cheddar Corn Muffins
Yield: 12
Ingredients:

1 2/3 cups Flour, all-purpose
1 1/2 ounces Cornmeal, yellow uncooked
1 tablespoon Baking powder, double-acting
3/4 pounds Apples cored, pared, finely chopped
1/2 cups Corn, whole-kernal, frozed thawed
2 1/4 ounces Cheese, Chedder, reduced-fat shredded
1/3 cups Sugar, granulated
1 dash Cinnamon, ground
1 dash Nutmeg, ground
6 tablespoons Corn oil
3 Eggs lightly beaten


Preheat oven to 400F. Line 12 2-1/2" muffin-pan cups with paper baking
cups; set aside. In large mixing bowl combine flour, cornmeal and baking
powder. Add apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to
combine. In small bowl beat together oil and eggs; stir into flour mixture.
Fill each baking cup with an equal amount of batter. Bake in middle of even
fro 15 minutes, until golded and tootpick comes out dry. Set pan on wire
rack and let cool.

Budafist mentioned making congee a while back...I think in the lunch thread. I found this recipe that looks like I will be able to make it.

Beef Congee
Yield: 4
Ingredients:

8 ounces Rump steak coarsely chopped
8 ounces Long grain rice
Stock or water
1 Piece star anise
2 Cloves garlic; mashed
1 (1-inch) piece of ginger sliced into 5-6 pieces
6 Spring onions
8 ounces Mange-tout
Salt and pepper
Sesame oil

Although this recipe calls for beef you can substitute any other meat or
vegetable.

Put the rice and four times it's volume of stock/water into a thick
bottomed pan. Add the star anise, garlic, ginger, salt, pepper and half
the spring onions. Bring to the boil then simmer, stirring occaisionally,
until the rice turns into a thick glop - about 40 minutes. Add more water
if needed.

Remove and discard the spring onion and add the beef. Cook for two
minutes. Add the beans and cook for a further two minutes.

Chop the remaing spring onions and add, along with a dash of the sesame
oil.

Goes very well with chinese chilli sauce and/or soy sauce.

From the French words mange (meaning eat) and tout (meaning all), the flat pods of mange tout are eaten whole. They are actually young peas still in the pod and picked before they have a chance to develop.

So I would guess snow peas? Buda?

Asiago Cheese Bread
Yield: 1
Ingredients:

9 ounces Water
2 tablespoons Extra-virgin olive oil
1 1/4 teaspoons Salt
1 tablespoon Sugar
3 ounces Finely shredded Asiago cheese (1 cup
Lightly packed)
1 ounce Shredded Romano or Parmesan (generous 1/3
Cup)
1/2 tablespoons Caraway seeds (optional)
1/2 cups Yellow cornmeal
2 3/4 cups Bread flour or unbleached flour
2 teaspoons Active dry yeast


Place all ingredients in pan of bread machine in order listed, or in
the order recommended for your machine. (I usually toss the grated cheese
with the cornmeal before adding it to the pan, to decrease clumping.) Set
controls for Basic bread with medium crust and start machine. Makes one
1.5-pound loaf.

Wainwright Inn Puffed Pancake with Black Cherries and Almond
Yield: 8
Ingredients:

4 large Eggs -- fresh
1 cup Milk
1/2 Lemon -- grated rind and Juice
1/2 teaspoons Vanilla
1 cup Flour
1/2 Stick unsalted butter
1/2 cups Frozen black cherries -- Thawed
1/2 cups Sliced almonds
1/2 cups Powdered sugar

Preheat oven to 475 degrees. Whisk together eggs, milk, lemon rind and
vanilla. Add flour and beat until batter is smooth. Place butter in
greased baking dish and place in oven until butter melts. Pour in batter
and bake 20 minutes until puffed and golden.

Remove from oven and sprinkle with powdered sugar and lemon juice. Offer
black cherries, almonds and additional powdered sugar as toppings.

Makes 8 servings.

ok i'm going off the top of my head for this one. i made it last night and it was soooo good.

crock-pot mexican chicken chili

about 2 lbs of chicken thighs
1 large onion quartered and sliced thinly
2 med green peppers sliced thin

16oz jar chipotle salsa
2 tbs chili powder
2 tsp cumin
2 tbs dried oregano

1/2 cup ketchup

for thicker sauce
mix 1 tbs flour with 2 tbs water


slice the onions and peppers and put them in the crock pot. put the chicken on top of the onions and peppers and sprinkle chili powder and oregano on chicken then top with the jar of salsa. cover and cook for 3 hours on high. take chicken out and set aside. add 1/2 cup ketchup, cumin, and salt (this is when you can add the flour water mixture to thicken up the sauce) let cook for 15 mins uncovered.

i served mine over egg noodles and it was the awesome. i rarely get a that was good out of my gf when i cook but she couldn't stop talking about this one =] i'll check the recipe again when i get home but i'm pretty sure that is right

Banana Cinnamon Toast
Yield: 1
Ingredients:

1/2 large Banana
1 slice Whole wheat bread; toasted
2 teaspoons Light tub margarine; melted
1 1/2 teaspoons Brown sugar; (or equivalent sugar substitute)
1/8 teaspoons Cinnamon

Slice banana half into 4 slices lengthwise and place on toast. Drizzle
melted margarine over banana. Mix together sugar and cinnamon and sprinkle over banana. Broil until brown and bubbly.

Tom Yum Fried Rice

Something I just cooked up this morning, a derivative of something me and my wife ate at some restaurant. For a quick and easy meal for lunch, brunch or dinner, an all-in-one meal.
Serves 2-3

Ingridients:
2 tbsp Tom Yum paste
8 pcs Kani sticks, chopped
a few pieces of shrimps
1/2 lemon
fresh sweet basil leaves
about 2 cups of cooked rice

Directions:
1. sautee tom yum paste in frying pan in medium heat
2. put in shrimps and chopped kami sticks in with the mix till cooked.
3. put in the rice and mix thoroughly then mix in basil leaves.
4. squeeze some lemon in the mix and enjoy. :)

Hearty Ham Chowder Recipe

Serves/Makes: 8

Ingredients:
4 cups potatoes (russet or red), cut in 1-inch cubes
3 cups cooked ham, cut into 1-inch cubes
1 can (15 oz. size) whole kernel corn, drained
1 can (15 oz. size) cream-style corn
1 can (12 oz. size) evaporated milk
1/4 cup chopped green onion
1/2 teaspoon each pepper, dry mustard and garlic powder
2 bay leaves, dried
1/2 cup shredded cheddar cheese

Directions:
Combine all ingredients, except bay leaf and cheese, in slow cooker. Stir gently stir to mix ingredients. Place bay leaves on top of ingredients. Place lid on slow cooker.

Cook on LOW for 8 to 9 hours OR on HIGH for 3 to 4 hours.

Carefully remove lid to allow steam to escape. Remove bay leaves. Gently stir in cheese. Sprinkle each serving with additional shredded cheese, if desired.

serves 8

Walnut-Cheese Balls
Yield: 8
Ingredients:

1 package (3-oz) cream cheese; softened
2 tablespoons Sherry
2 tablespoons Butter or margarine
1 Jar (6-oz) sharp cheddar cheese spread
1/2 teaspoons Horseradish; well drained
3/4 cups Finely chopped walnuts


In small mixing bowl, soften cream cheese & blend in sherry. Add butter,
cheese spread & horseradish. Mix well. Cover & chill thoroughly about 4
hours. Shape into 1-inch balls & roll in walnuts. Refrigerate until serving
time. Makes about 30 balls.

Ingredients:

2 pounds Dry lima beans; small
3 quarts Boiling water
8 ounces Salt pork; finely diced
1/4 cups Instant minced onion
3 tablespoons Prepared mustard
2 teaspoons Worcestershire sauce
2 teaspoons Chili powder
1/8 teaspoons Garlic powder
2 cans Tomato soup; condensed, (10 1/2-oz each)
1/4 cups Vinegar
1 1/3 tablespoons Brown sugar
2 cups Bean cooking liquid

Line four 8x8-inch baking pans with heat-resistant freezer wrap. Allow
enough extra wrap to fold over top. Use one pan for each six servings or
one-fourth of the recipe. Do not line pans for food to be served without
freezing.

Add beans to boiling water; return to boiling. Boil beans 2 minutes; then
soak beans 1 hour (or overnight, if preferred). Cook beans slowly until
tender, about 45 minutes. Drain; save 2 cups cooking liquid. Brown salt
pork with onion. Mix remaining ingredients with salt pork mixture. Add
beans; stir gently. Pour one-fourth of mixture into each baking pan.

TO SERVE WITHOUT FREEZING Preheat oven to 400º F. (hot). Bake 30 minutes.

TO FREEZE Cool for 30 minutes at room temperature. Complete wrapping by
pulling paper up over top of food. Put edges of wrap together and fold
several times so paper lies directly on top of food. Fold ends of freezer
wrap over the top and seal with freezer tape. Label with name of food, date
of freezing, and last date the food should be used for best eating quality
(about 6 months). Freeze immediately for 10 to 12 hours before removing
packages from the pans.

TO HEAT FROZEN FOOD Preheat oven to 400º F. (hot). Remove freezer wrap.
Place food in baking pan. Bake 1 hour or until center is hot.

NOTES : This recipe is for 24 servings (about 1/2 cup each). Directions
aregiven for dividing the prepared food into four parts of six servings
each. One part may be completely cooked and served at the time of
preparation. The remaining parts may be frozen.

cheap, easy dessert!

A Quick Dessert
Yield: 4

Ingredients:
4 Pieces toast
4 slices Cheese
Nutmeg
1 1/2 cups Applesauce
1/4 cups Sugar

Add sugar and nutmeg to applesauce. Put applesauce on toast, about 3
tablespoons on each piece of toast. Lay a slice of cheese over the sauce.
Bake in a moderate oven until thecheese melts. Serve hot.

Next time I'm going to substitute cream of celery for the cream of chicken soup, crumbled bacon with the sautéed ground turkey and throw some shredded mozzarella/cheddar cheese on top 10 minutes before I take it out of the oven.
For my vegetable friends I'll use sautéed peppers, onions and mushrooms instead of the turkey and just cream of celery soup.
Prep time: less than 15 minutes, cook time: Enough to do your nails. It's perfect!

^^^I've had a delicious variation of the Tater Tots Casserole, done with breakfast ingredients (think just eggs and cheese and optionally bacon). Deelish.

Ah, brunch. What is it about brunch that is so appealing? Is it because you can eat pretty much anything, and top it off with a mimosa? I think that's what I like. They just seem so . . . cozy. And yummy!

I was thinking of these as a dessert, but hey, brunch works too:

Apple Phyllo Kisses
Yield: 1
Ingredients:

1 cup Finely chopped cookg apples
1 teaspoon Lemon juice
1/4 cups Grated Cheddar cheese
1 tablespoon Minced fresh chives
4 Phyllo dough sheets
1 1/2 tablespoons Melted butter


In a small bowl, combine apples, lemon juice, cheddar cheese, and chives.
Set aside. Preheat oven to 375' F. Cut each sheet of phyllo in half
lengthwise and into fourths crosswise, forming 32 6 x 4-inch squares. Lay 1
square of phyllo on a sheet of waxed paper. Brush lightly with melted
butter. Repeat with 2 more squares of phyllo. Place 2 tablespoons of
filling in center. Bring up opposite corners of square and pinch to form a
"kiss". Repeat with remaining phyllo. (You should have 8 filled pastries)
Transfer to lightly buttered baking sheet. Bake for 15 to 20 minutes, or
until golden brown. Serve warm.
