Mrs Kool and I have enjoyed this side dish once or twice a month for years. We like the "Fried Rice" flavor, even though it is nothing like asian fried rice. Anyway, over the last couple of months I can't seem to cook it right anymore. I bet I've made this stuff a couple of hundred times with no problem but now no matter what I do it comes out hard & tough. Anybody else have this problem or even eat the stuff?

ironically i've noticed the same thing. it's like the water is evaporating quicker making the rice hard, i've been adding more water half way through cooking it...
they might have changed rice suppliers...

Exactly! I've tried adding water too but it never comes out quite right.

have you guys tried "Near East" rice pilaf mixes? those are pretty good. All natural too. I think you can get them at larger chain supermarkets, but otherwise they are at any healthfood store.

They changed the instructions recently. I don't eat it often enough to remember what changed, just was surprised by it at the time. (I only use the long grain/wild to stuff cornish game hens. I don't eat it otherwise. Toooo salty.)

We like the chicken flavor. I'll have to get some and check. We had some about 2 weeks ago and I didn't notice anything different. I'll report back! I love rice a roni!

I used to eat boxed rice a lot, but I have started cooking brown rice in a rice steamer. It's so easy, and pretty healthy. I put a cup of rice in the steamer, I usually add chicken broth and maybe some lime juice, salt, pepper, and set the timer. When it's done I sometimes add parsley, onions, or mushrooms. I have tried variations where I start with hot sauce, or any other liquid that would give the rice flavor.
Good luck with the Rice a Roni. I like the "Near East" rice pilaf mixes too.

Rice fields/crawfish farms are everywhere! I use Cajun Country Rice cause it's locally grown and they hired a cajun illustrator to do an illustration for their packaging!!

But I can picture the product. We have a few Chinese imports in the large supermarkets here, used to be a treat back in college. Now that I can afford to, I don't eat any packet food (like PD said, too salty).

Whatcha got there isn't rice at all, but bleached rat droppings. If its good enough for the Chinese, its good enough for you. So clean that plate mister!

I use this brown rice (dish) recipe (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_30664,00.html). From Alton Brown's (FoodTV) show Good Eats.
Most of the time I just use the second half of the recipe:
Baked Brown Rice:
1 1/2 cups brown rice, medium or short grain
2 1/2 cups water
1 tablespoon unsalted butter
1 teaspoon kosher salt
Preheat the oven to 375 degrees F.
Place the rice into an 8-inch square glass baking dish.
Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.
Steam up some fresh veggies to go with the rice.

I just cook my brown rice right on the stove, similar to white rice. 2 1/4 cups water (or chicken or beef stock) to a boil with a tablespoon of butter or margarine, add 1 cup uncooked brown rice, cover tightly, flame to low, simmer 45 minutes. Sometimes I mix in some frozen peas about 10-15 minutes before it's done.

I like peas and I like rice but, I don't like peas and rice. I always tell the people at the Chinese restaurant to hold the peas in my shrimp fried rice.:confused:

Never heard of rice a roni either. Sounds nasty to me. I cook my plain white rice in a rice cooker like any good Chinese girl does. :D

Oooh, I've done that Jim! My grandmother used to actually make us egg noodles with maple syrup and butter on top sometimes, as a treat. It's yummy. :)
Rice > potatoes. Oh well, not really, they're both equally yummy, but there is something about rice, particularly with Indian food.
I just made fried rice for dinner. As in from scratch. But when I am feeling lazy a good box of rice o roni does the trick nicely. I haven't had any cooking issues with it.

Reminds me when my Mom would slow cook rice and milk and sugar until it became thick and creamy .... then add a few raisins ... omg it was the best rice pudding I ever had ;)
It was a special treat for us once in a while ... we always got excited when we saw her bring out the double boiler :D

I've never had rice pudding. Sounds good, though! We have the yummiest bread pudding in the world here. It's so good with rum sauce! Now I want some! But I have creole cream cheese ice cream on the way, so it's all good!

I totally understand Red.
My mother used to make cheesecake. A huge roasting dish size cake the width of the oven every now and again. That is until she realised that I would eat the whole thing in a matter of days! The rest of my family just didn't appreciate it the way I did.
