This might be a silly question, but which pantone black should I specify for a 2-colour print job? Should I just use process black or is there a darker one (uncoated)? thanks!

Might look at
Black 6 U

Has some blue mixed in, makes it a little deeper, just an idea.

Pantone black has a brown-ish hue to it...

the other colour is a red (PMS 186) so maybe i'll just go with the brownish one. thanks for the info!

Be sure of your printer. I wouldn't be surprised to see many just substitute just basic black for whatever Pantone variety you specify. I would talk to them first as there are actually some richer commercial mixes that some presses use routinely for all their non-cmyk black work. They can usually tell you what works best for each press/paper combo too.

I think we usually use process black when we get given a black separation. That is unless the customer specifically specifies that they don't want normal black.

More often than not people are setting up 2 spot colours and they can't find normal black or thing that we can't use CYMK black as a spot so they give us a random pantone black when really they just want normal black.

Therefore, talk to your printer. Let them know why you don't want to use normal black (not dark enough, not blue enough, not warm enough) and they can probably mix something for you.
