I've seen some people put links to their site at the bottom of a client's site near the disclaimer/copyright...like "Site Designed by....(designer's name/compay)"...

What do you think? I know my inclination is to do this but then I see a lot of web professionals don't and I'm curious as to why...

I usually do it. I usually make sure it's out of the way though.

It should be on your contract. You discuss with client before you put this on. It is advertising, so ideally you should offer a discount for advertising your services on someone else's website.

It is something I always discuss with a client first.

Only one has ever said I couldn't do it.

I agree with this too. We put a link on our "Basic" sites, which are a discounted price because they are smaller/brochure-like sites that follow a standard layout. Usually we word it like this: "To contact the Webmaster, click here: link" For the more advanced sites we discuss this with the client and normally leave it off.
