Can anyone let me know whether it is possible to licence Adobe CS to a Mac and upgrade direct to CS3.

Yes. You can.
Provided you have a legit license for CS. You have to supply the CS serial number in order to upgrade to CS3 and you have to activate the CS3 software online directly to Adobe before you can use it. If your serial number isn't legit (ie already registered) you are not going to be happy with the results.
