I'm a new Mac owner and just discovered that these keys don't put the cursor at the beginning or end of a line in Safari or Firefox for Mac. Why is that?

Because it take you to the top of the page and the end. It's the only way I've ever used home and end for web viewing. Very handy when you want to go back to the top navigation or need to view the bottom for some reason that escapes me right now.

The home and end keys take you to the beginning and end of the current document, as their name suggests. I've never understood the logic behind the windows behaviour...

Do you mean the beginning or end of a line when you're typing something? Hold down the apple key and press Home or End to do that (atleast on my MacBook that works). I also use the home and end keys to jump to the top or bottom of a page. On my macbook you have to hold down "fn" and home or end to do that... Or am I way off and that's not what you were asking?

What's odd is that the keys function inconsistently. If I'm using an Adobe product to edit a line of text, the home and end buttons move the cursor at the begining or end of the line. It just seems to be the web browsers. I would have assumed when typing into a text box field, they would retain the same properties.
