I’d recommend
Online:
www.lynda.com
www.w3schools.com/
Offline:
The Sams publishing “Teach yourself in 24 hrs” range of books.

I've also found the Visual Quickstart Guide books to be really easy to understand and informative.

Adobe offers video tutorials. Check out www.adobe.com/designcenter (http://www.adobe.com/designcenter). Adobe is also currently doing online seminars. There was a beginners session this week. I know you would have missed it, but they record each session. It should be available next week. There is also a "Boot Camp" one coming up at the end of the month. It's currently full, but again you could check it out when they post the recorded video.
