what I have found helpful is to find a good drawing tutorial and try to reproduce the results in Illustrator... first drawing the outlines with the pen tool and then filling in the colors using the gradient mesh.
here are a few drawing tutorials I googled that might help you:
homepages.tesco.net/~p.wilkinson/DrawEyes.htm (http://homepages.tesco.net/~p.wilkinson/DrawEyes.htm)
www.portrait-artist.org/face/eyes.html (http://www.portrait-artist.org/face/eyes.html)
Hope that this helps!

Find a large image (of a eye) play with the colours, contrast etc in PhotoShop and then redraw it in Illy.
Maybe have a look at Japanese Manga art (google it) for inspiration, they have amazing eyes.

do you want to draw realistic eyes or cartoonish eyes? of course realistic is a lot harder and you will need to know not only illustrator but traditional illustration as well
What I do in Illustrator is take a picture that I like, place it and lock it and then draw on top, that way is easier to keep the shape and proportions right, I change it a little to give the drawing the style I want but the picture base helps a lot, I draw the outlines with the pen tool then do the filling, if I'm doing a cartoon drawing with front view I just draw one eye and flip it to do the other, that way they both have the same size and shape, after that I only need to move the pupil, and use gradient to give it depht

if i remember correctly the eyes are verticaly placed in the middle of the head and each eye is center alined with the ends of the mouth, and each eye is the width of the mouth minus the width of the nose.
i don't know if that helps any....
a figure drawing/body structure class might be able help too, i don't know.

Silence- Our art teacher told us that the eyes were one eye width from either side of the head and one eye width apart from each other, but what does a junior high art teacher know.
Cecil- have you looked at getting a drawing tablet?
Match in the gas tank, boom boom.

I teach children how to draw with paper, and I always say draw what you see, not what you know. I also don't let them erase. I think it builds their self estem and I think every stroke is meant to be. Make it part of the picture. In my book, words to live by in my line of work.
I would love to be able to invest in a drawing tablet,
t's only months away!
What does :D those were really useful mean?
I didn't see anyone whose que was :D.
mean (from post above)??

Eraser Nubbin, that is also true (ahh, its all coming back).
when you draw the mouth, the ends start directly center with each eye (i guess making the mouth 2 eye's wide)... and when you draw the noise, iits only as wide as the space between the eyes (which aparently is 1 eye's width)...
SO that being said... an eye's width is as wide as an eye's width. LOL
