Is there any way to use a pattern as a stroke in Illustrator? I am designing a boat wrap and he wants a blue fleck pattern as the stroke on one of the words on the boat but I'm not sure how to go about creating that... Would it be easier to try it in Photoshop at the same scale as the boat is in illustrator??

outline the stroke then apply the pattern

This might sounds silly, but how... I outlined my text and what I tried was creating a clipping mask and just putting that behind the word but it wont create a clipping mask...

If you have outlined your text, add a stroke as a solid colour, then go to object - path - outline stroke. Ungroup it from the text body. Then you can add gradients paterns whatever.

Make sure you copy the editable text and hide it, just incase you need to edit the copy later on!
