Hi

I have Illustrator CS3 version and I used to use Illustrator years ago. Can I specify a Pantone Black at 50% in my artwork and text somewhere in this program? I have one spot color that I figured out how to change to the actual Pantone color I want, but not a variation of the Black that will appear as the Pantone Black at 50%.

Select your shape and drop the color slider from 100% to 50%.

Is that the color slider in the Color Window under K (black) for the CMYK values?

Just want to be sure. Thank you!

I'm from the days of printing it out and WRITING the color specs ON the print out!

No, if your shape is a PANTONE color it shouldn't have CMYK sliders. Select your PANTONE color (make sure the black dot is on the swatch):

Once done, you should only have 1 slider. it will be "PANTONE ____" with the single slider. Similar to B/W only slider.
