How do they create designs such as these on leather products?

looks to me like they print the leather then sew them up.

Is this a homework question or do you really need to do this? If you really need to do this you should contact you nearest fabric printers and ask them. They would have a better idea.

The first one is possibly done with pad printing.
The other two were probably done by printing the leather/vinyl first then sewing it up.

Pad printing is so cliché ;)
Pad printing which is similar to gravure printing in that an image is transferred from one surface to another is comprised of three major components: pad, ink and cliché. The cliché is made of a hard polymer or steel material and is configured with the desired design etched less than ¹⁄₁₀₀₀ in (25 µm) into it to act as a reservoir for the ink.

Each set is made/printed in an entirely different way.
The third set is easy. The material is not leather or skye it is a woven fabric.

You may see it better on the following model:

The second shoe,

The middle panel (gold on white skye) is printed using a roll press on a strip before being stanced out.
Now the first one is really difficult!

Difficult from an industrial engineering standpoint.
At first I assumed that the graphic is printed and the legs on nike symbol are printed seperately. then glued on to match and then stiched over. A relatively easy and common process.
Then I had a closer look.
Notice the stiches going over the feet of the cartoon figure are NOT blue!
This means that the cartoon figure on the nike symbol must have ben printed on AFTER the symbol was stiched on. So it was not done in the above process.
Now that is intriguing enough to warrant a trip to the local shoe store to have a closer look!
