What is the best shopping cart for me to use on my Mac? I will be doing the website in DreamWeaver CS3.

Thats up for debate. Lots of people argue about just building it yourself as opposed to anything. Some say not to use the free carts because its open source so a potential hacker knows exactly what your system looks like and how it runs. A lot of people dont like the restrictions pre-built carts make also. Its really up to you.
Zen-cart and oscommerce are the more popular of the free carts.

Unless you're going to be hosting the web site from your Mac—and I assume you're not—then we need to know what type of server it will be hosted on.
What is your level of HTML/scripting/programming knowledge? There's no point in us pointing you towards something that's going to be way over your head.
Are you looking for something highly customizable, or something you can just plug in?
Does it need to be open source, or is it something you (or your client) will be willing to pay for? If so, what's the budget?
Who will be maintaining the cart and what is their knowledge level?
Related to the above: What does the shopping cart need to do? How many items will it have now? What about later—will there be significantly more? Does the cart need to tie into real-time inventory availability, or is it something much simpler? Do shoppers need to have wish lists, order tracking, etc? How do you plan to accept payment?
If you don't answers to any of the above questions, then I'd recommend that you do some research first. Google is your friend—try searching for terms like: ecommerce tutorial, ecommerce basics, shopping cart comparison, shopping cart reviews, etc.
Once you have an idea of what you need, then come back with some specs in hand as well as a list of things you've looked into that you think might work, and I'm sure you'll get plenty of responses.

Have you considered building your website inside the framework of a Content Management System (CMS) that may have an e-commerce module with it? Drupal, Joombla, Wordpress are 3 of the common ones. You can still create your own look and feel by designing a CSS template, but the functionality will already be pre-built for you.
