It's just a small issue, but how do I change the colour of my text from one colour to another? I can't believe I don't know this!

There's a Character Panel in After Effects, just like in Photoshop and Illustrator. If you can't see it, just go to Windows => Character to open it. ;)

Thanks, but I already know that. I want the text to change from one colour to another (e.g. from red to blue), the character panel just changes the colour.

Is there a stop watch mechanism I can use in the effects panel, or is it something else?

Oh, I see what you mean! You want it to transition from one color to another... xD

Just place a second text layer overtop of a different color, and reduce your opacity until the first layer shows through. :) There is no keyframe option for color.

In AE you can animate text color/stroke/ along with all the normal tracking and kerning with key frames. Type in your text. Click the arrow on the layer to open up the properties. To the right of the first property in the list called text, you should see the word animated with a little play button next to it. If you don't see it you need to go to the very bottom of the window on the left and click the the icon that looks like a circle and square overlapping. It's the middle icon. You should then see the animate and play button in your properties. The rest you can figure out.

EDIT::: I'm assuming you are using AE 7 or above.

Oooh... That option isn't in my version of AE. I'm only on 6.5. T_T

You should be able to animate text in After Effects 6.5 in the same basic ways as you can in later versions.
