This is driving me nuts, and I've done everything I can think of to try and amend it.

Please also note that the icon in my dock is the regular color, but the icon at the top of the toolbar is wonky-faded. The colors stay the same, no matter the window's position in the screen.

I've gone in and out of color modes. I've combed both program and system display preferences. Proof color view mode is off.

Color select was from an RGB image and unfortunately, this problem happens with all of my documents, not just this one. And I know it's not a matter of a wonky spot color, if I copy and paste an element into any other Adobe program, or view the file in any other program, the colors show up just fine! But! The thumbnail view of the file has the screwy colors as well. Do I have the world's most screwed up virus or something???

What happens if you go to View>Proof Setup>Custom and choose sRGB?

If it's fine in every other program then it should be ok, probably just the way illustrator is viewing the document based on your Color Profile (if you change this you have to Assign the Profile - found under Edit)

If it's for web then see what it looks like in a browser.

If it's for print then see how it looks on your printer or in the layout with the PDF export settings you use.

Seen as you're working in RGB I suppose you're heading to the web output option?

Definitely check your working profile.
