I would suggest that you start with an conceptual effect instead of a software one. Remember that the best logos are idea, not effect-based.
It's pad, graphite and doodle time. What kind of carving are we talking about? For memorials and headstones, or art, or signs, or .....?
It's for a poster I'm designing for an art exhibition - stone carving. I've pretty much come up with the logo design, made it work in b&w etc but now am needing to add colour. The client wants it to look like it's engraved or something to that effect. I was just wondering how I can work with the text to make it look like that in Illustrator.. I can do it in Photoshop but am not sure about bringing it into Illustrator and if it would stay vector art (I have to resize it for banner, website etc).
I'm a bit scratchy on using these programmes, I have been busy with my baby for the past year and am just starting to get back into design - first project is always scarey!

Okay Meow... let's just stick to technique then. The good news is that vector 3D 'carved' text is possible with AI CS. Stick to a roundish face (to avoid bevel instersections), combine with an outside frame and add texture with a vector symbol (to keep things scalable).
