Don't like eggs as a food in themselves but custard pies would be much the worse without a few.

Those deviled eggs look good. I haven't had any since last Thanksgiving but now I'm craving it. When I'm just making them for myself I forgo the whole separation and stuffing process and just chop it all up together and make sandwiches. :)

MMMMM....one of my favorite egg recipes is egg salad with added chopped spinach and grated carrot and a little but of cumin. Made with Hellmans of course.

Mom made those eggs for lunch yesterday, Kool. They were all nommed in 30 minutes. :)

I love a good egg salad too! Has anyone used Duke's mayo? They've just entered our market in the last couple of years, but I haven't tried it yet.

Yay eggs! Here are a few of my favorites:

Eggs in a Bacon Basket

Ingredients:
1 slice bacon per person
1 egg per person
Parmesan cheese

Prepare muffin tins with cooking spray. Line tin with one slice of bacon to make circle. Drop one large egg in middle. Sprinkle with freshly grated Parmesan cheese.

Bake at 450 degrees for 8 to 10 minutes.

Eggs Benedict

2 slices of fresh-baked bread, lightly toasted
2 slices of prosciutto
2 poached eggs


Healthy Hollandaise Sauce:

1 1/2 Tbsp butter - melt over medium heat
1 1/2 Tbsp flour - add to butter, cook and stir 1 min.
slowly add 1/2 cup milk, continue stirring while it thickens
beat in 1 egg yolk, cook 1 minute
stir in 1/4 - 1/2 tsp lemon juice

Add (salt) and pepper to taste, parsley and dash of cayenne pepper.

(If sauce turns out a little to thick, just stir in more milk to get the right consistency.)

Serve with hash browns and fresh fruit.

Has anyone used Duke's mayo? They've just entered our market in the last couple of years, but I haven't tried it yet.

Wouldn't use anything else. It's made in Greenville, South Carolina, but owned by Sauer's, a Richmond, Virginia company. I used to live in a dodgy neighborhood a few blocks up Broad Street from the Sauer's spice factory. When the wind was right I could tell you whether they were grinding cloves, nutmeg, cinnamon... Other days the aroma of baking cookies from the FFV bakery on North Boulevard would waft our way, drifting along Broad toward downtown.

More often the wind blew -- well, bus and car and truck exhaust from Broad Street itself. Can't win 'em all.

I'll have to look for that brand of mayo the next time I'm in a larger city.

I agree. Great as an ingredient but I'm not the biggest fan of them as a stand alone food. Every so often I'll have a couple over easy but that's about it

There's been a big urban chicken push around here lately. I personally know three people that have chickens in their backyards for the eggs. They all say there is no comparison between them and the store bought variety. Maybe I'd like those more. Seems like I used to like eggs, not sure what happened

I do like eggs, but they are kinda gross.
If done wrong they can really be farty.


My wife and I both agree that deviled eggs are one of those things that are totally yummy, but totally weird at the same time.



The last couple Summers we've gone camping with the neighbor's family.
The husband --and to a lesser degree the wife insist that to camp-out properly they MUST have scrambled eggs and bacon for breakfast.

I pretty much though the same thing years ago, but the clean up just wastes time (I hate eggy dishwater cleanup).

I prefer the granola/meusli and whole yogurt & fruit when camping. We pack hard boiled eggs. Easy clean up. Fast.




The other day Jacques Pepin was on PBS demonstrating how to make omelettes in three different methods. his classical French omelette looked astounding.

On weekends, I used to lay a layer of hash browns on the plate, cover with cheese & bacon bits, then lay three eggs, over easy, on top.

Awesome breakfast.

I've made a layered frittata sort of thing before, where I make (freshly shredded!) hash browns, and after flipping the first time I add egg on top. Once that's set I add cheese. Yum. Hm... haven't made Sunday breakfast in a while.

This is from the recipe thread. I've done this lots of time and it works great for camping. :)

Omelets in a Bag!

Great for camping or anytime you are trying to prepare breakfast for many.

Have your guests use a permanent marker to write their name on a quart size freezer bag.

Crack two large or extra-large eggs into the bag (more than two will not work), shake and knead the bag to break the yoke and combine the eggs.

Provide a variety of ingredients such as cheese, ham, onion, green pepper,
mushrooms, tomato, hash browns, salsa, etc…

Have the guests add the prepared ingredients of their choice to the bag and
shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling-boiling water for exactly 13 minutes. You can
usually cook 6-8 omelets in a large pot. Use another pot of boiling water if
you have more than 8 omelets to make.

After 13 minutes, have the guest take their bag, open it and the omelet will
roll out easily onto their plate. Be prepared for everyone to be thrilled.

A serving suggestion would be with fresh fruit and a coffee cake, muffins,
caramel rolls, jelly rolls, etc…

That's a great idea. I'm planning on a few camping trips this summer, gonna have to give it a shot. Or maybe even the next hungover Sunday

You could use a paper bag to do your bacon and eggs. More 'sustainable' than a plastic bag? Maybe. It might take a while though.
