When working with placed images in Illustrator the color is completley different. I have read up a bunch on color managment/workspaces in the help section but I still have no idea how to resolve this. How do I get AI to diplay true color, or at least PSD color?

have you tried setting both Photoshop and illustrator to a matching color profile?
I set mine up pretty much for Photoshop (Photoshop RGB 1998) in both when working between the two. If working with CMYK i set both applications to whichever printer I will be using for output. That should maintain your color consistency between the two.
Or buy a color management program and create a profile for your monitor/scanner/printer and use it in both. I like the Eye One Photo System made by GretagMacBeth.

Yes make shore that the color profiles match as Allen stated. I use generic CMYK for photoshop and everything works fine after that.

I run into this and sometimes have problems with it even though my colour settings are matched. The thing is, at least with my versions of PS and Illy is that Illy reads CMYK to the second decimal point, and PS only works in whole numbers....so, you might have a C value of 53 in PS, but it converts to 52.66 in Illy - just enough to drive you nuts and ruin the print out. I actually have to resort to copying down the PS values and then matching those manually in Illy for anything I'm creating in Illy. It sucks. I have the new CS but haven't installed it yet, hopefully I won't have these issues with that.
