I'm currently using an hp scanjet 2300c and I'm dissatisfied with the default software. Sometimes it cuts off part of my pictures and can be a pain to work with. Does anyone have recommendations for some different/better software than the hp stuff?

silverfast maybe? They make scanner software by scanner model. I don't know if they have one to for your scanner or not, but it is good software.

It came with my Microtek Artixscan 1800f and it is definately better than the software Microtek provides for the scanner. I am thinking of getting the silverfast studio to work with RAW images, if the updated Adobe Camera Raw 3.1 doesn't do well.
