I have a document which I'm trying to print, but for some reason it is stuck on trying to print four colour plates.
In Print Output, instead of saying Colors: CMYK, it says Plates:, and the drop down menu says 'Convert to process' or 'spot color'.
When I try to print it prints out four black pages. It is only this particular document that does it. I've tried ticking and unticking 'Separations' but it makes no difference.

If I am understanding you correctly you are attempting to print one page, not separated.
Have you made sure in the Print Menu you do not have Separations selected, then in the Output Menu you have Composite CMYK selected?

Yep, I'm trying to print one page on our colour laser.
Separations was selected but I unticked it. In the output menu the only options are 'convert to process' or 'spot color'. The usual CMYK option is not there and instead of saying 'colors' it says 'plates'.

Okay, next check to make sure you selected the correct ppd. Apparently the one you are using does not have the option to print Composite Images. Maybe try even the generic color ppd.
