I use a butter knife to score it to the skin then a spoon to shovel it out.

paring knife and spoon are good for me...though if you are looking for precise cubage that would be good.

If it's soft enough, then I might do that too.

Though I most often eat avocado in slices, so just take a sharp knife to the whole avo to get the wedge cut then peel the skin off the wedge.

Audi and I have only ever had Avocado when we've gone out for dinner. We went to try it at home once (forget what we were making, but decided we'd put some avo in it) and the thing was hard as a freakin' rock! we obviously don't know exactly what to look for when picking avocados.
