              The Pork Loin I grill is about the length of my arm. I tend to cook too much anyway, just bring something along to drink, and help me refine the menu...or other suggestions.

                If you are only going with a couple desserts, I would go with the baby cheesecakes and choc. covered strawberries. I love mini desserts at events like this

                  • one reason we do it Saturday and more dinner is because our church has a mother's day brunch to benefit the youth's mission trip each year.

                    Refine as in narrow down.

                    Desserts we'll be doing the Mousse Cake, Lemon Angel Food cupcakes, fruit and chocolate covered strawberries (my aunt does the last 2 things)

                    Going to Nix the Salad and the quinoa and replace quinoa with black bean salad with corn, red peppers, avocado & lime-cilantro vinaigrette. I thought of nice little Spinach/Sun-dried Tomato and Feta Frittatas but my wife nixed those as well saying she doesn't like eggs cooked to long like a frittata would be.

                    Might look for a Citrus-style Shrimp.

                      • Pretty tasty dinner:

                        Mediterranean Salmon & Pasta Bowl
                        8 oz fettuccine
                        2 tablespoons olive oil
                        1 pound skinless, boneless 1-inch thick salmon, cut in 8 pieces
                        Salt and ground black pepper
                        6 cups packaged fresh baby spinach chopped - one bag
                        1/2 Onion chopped
                        1/2 cup roasted red or yellow peppers - I used 4 peppers roasted
                        1/2 cup balsamic vinaigrette
                        Feta cheese

                        1. Prepare pasta according to package directions.

                        2. Meanwhile, brush 1 tablespoon olive oil on salmon. Sprinkle with slat and pepper (and Italian seasoning). Heat an extra-large skillet over medium-high heat; add salmon. Cook 8 to 12 minutes or until salmon flakes, turning once. Remove salmon; cover and keep warm. Add onion and sauté adding peppers once onion becomes translucent. Add spinach to skillet. I added some chopped garlic. Cook and stir 1 to 2 minutes, until spinach is wilted. Drain pasta; add to skillet. Add vinaigrette; toss to coat. Season with salt and pepper. Divide spinach-pasta mixture among four bowls. Top with salmon and Feta.
                        Serves 4.

                        ** I used 3 pieces of cryovac frozen salmon pieces.
