    Is there a way to create a reference link that updates it's self?
    For instance, as I put together a document of 50-100 pages it would be great to be able to create links to particular bits of information as I go along...

    'as seen in figure 12, page XX'

    and to have the page number automatically change should figure 12 be moved.
    Can this be done?

    No - not in InDesign.
