Is there a way to make a gell effect in AI CS? Looking for a look like mac icons. Gel, or shiny.

You might want to do a search for gradient meshes. Try out DesignerToday magazine ^^^ link up top, it has a very extensive list of Illy tutorials that should get you close to what you want

Check biorust.com and thewebmachine.com. I don't know if they have AI tuts for a gel look but I do know they have them for PS.
