get rid of annoying 'spike' on outlined text

Hi Folks

I hope somebody can help me out with this one.

I'm working on a small project and I've got 3 x 'layers'. On each layer is the same word of text.

Layer 1: text has a 48pt stroke - stroke and fill set to black
Layer 2: text has a 24 pt stroke - stroke and fill set to white
Layer 3: text has a 2pt stroke - stroke and fill set to a colour

The three layers are then positioned on top of each other.

Everything is fine, except, I have some little 'spikes' where the stroke hasn't quite worked (please see attached).

No matter how I try, I am unable to 'select' this spike and get rid of it.

Any suggestions please, or a better method of achieving the same.

Change the miter limit of the stroke in the strokes panel.

Beware of strokes. Especially strokes set to white over a black shape. Adobe doesn't consider white a color, nor does it think it can overprint.
If you mean for the white paper to show through the logo, outline your white shape and use the pathfinder to knock it out of the black shape. Especially if this is a logo, a sign being cut in vinyl, or just on general principles.

Some sign programs do not scale strokes by default. And if it is combined with other artwork, then scaled up, the scaling of the stroke may not be noticed. Expand and combine to get the simplest shapes possible.

Bottom one preferred.

This problem has plagued me for quite some time (I've gotten quite adept at jerry-rigging a fix) so I also appreciate the solution!

It also might not hurt to check out the nodes on the original item you are outlining (or forming an offset path). Sometimes there may be a rogue node that is minute enough that you won't catch it until you start building around it!
Toying with your miter limit will usually help, but if not...look at your nodes!
And keep it clean...
