We have a turkey farm near here and every thanksgiving they give the giblets away for free. Hearts and Gizzards or Livers. I stock up on both. The livers are really good pan fried in spaghetti sauce with onions. Hearts and gizzards just get boiled with garlic.

I'd love to try tongue but want to know someone that knows how to make it right. There is a slow-cooking trick apparently to making it tender.
Same goes for kidney. I've had great kidney pie in the UK but it always tastes really gross whenever we tried it here.

Gramps used to make tripe all the time. It's ok. Not on my favorites list. He also made pluck which is fried beef lung. You can't buy that in stores. We used to go to a butcher shop in the North End, Boston to buy sheep brain. Very tasty sliced thin, breaded and fried with eggs and bacon. It has a texture that takes getting used to but is really tasty. Not sure you can get that any more either and that butcher shop is long gone.

Speaking of semi-gross foods, just getting ready to do up some steamers and lobsta for FoJ get-together. I'm glad lobstas don't have vocal cords...

Yep that's the one. There is a Chinese market here that has them but they are super expensive. I haven't bought one on the chance that it is so gross I just end up throwing away a $20 piece of fruit.

From what I understand, lung is illegal in the US to sell/serve. Brain is very high in cholesterol.

man i haven't had steamers since last summer. i gotta stop at one of the local spots and fix that

Easy. The smell. Especially for RMO.

I've had cow tongue, I know that is a muscle, I just can't stand the taste and texture... Barf...

Reminds me what is that saying, "no matter how much you polish a turd, it is still a turd".

There are just somethings that shouldn't be eaten (IMO), and animal organs are some of those things.

We spent last week on the coast of Maine--that was my meal for the last night, a half-pound of steamers, two lobsters, potatoes and corn on the cob.
Paired that with a nicely hopped local 7.5% farmhouse ale.

Awesomeness.

According to the student at the coastal research aquarium, not only do lobsters not have vocal chords, they don't really have brains either.
