Hmmm... I don't believe I've been introduced to Mr. Urst, have I? What are his qualifications for this coveted information?

Uh huh. Riiiiiiiiight. The ol' "It was sooo good they ate it all before I took pictures" dodge. Heard it a thousand times. Even used it a time or two myself. NPNH Typ.

Must've turned out pretty good. How about some details? Wood used? How long? Out of curiosity, were the skins on again? Where do you find those? I've yet to find any out here that haven't been skinned. I'd like to try a couple like that just to see how they do.

hahaha ok i do have some proof!

i used some leftover pulled pork in the beans and the chicken was done with my hot and sweet rub, 300 degrees for 1 hour 45 mins flipped at the 1 hour mark.

ok the butts yesterday were done at 250 for 13.5 hours. royal oak charcoal, simply marvelous hot and sweet rub. skins were on but i trimmed them, i like getting the rub on more of the meat and it comes out just as moist either way. the only way i see butts and shoulders are with skin on. these were smithfield brand i think and $.99/lb which is pretty much average around here.
