Happy Friday, all!

It’s been a good week – very productive and only a 4-day work week. And my email inbox is completely empty for the first time in several weeks.

Whatever your weekend plans are, I hope it’s a great one.

Going to hit the dry cleaners tomorrow and take the sister in law to the docs and get some take out I think.

I managed to get the lawn mowed yesterday evening after Mr. Snake had gone to bed. I haven’t seen him (actually her, I think) today yet. I’m thinking she was publicity shy and skittish about having her picture on the internet.

It’s good I didn’t have anything planned this weekend, since the whole city’s been on lockdown with a city-wide curfew imposed. Like many cities, Salt Lake’s peaceful demonstration in the aftermath of the George Floyd killing in Minneapolis turned into a riot with cars burned, buildings being vandalized and looted. The whole thing is just incredibly sad.

We are slowing coming out of lockdown here in New Zealand and this weekend was the first time we were allowed farmers market to open since mid-March. It was lovely going to the markets, seeing lots of people together. Browsing like we did back pre-covid. We have had a complete ban on events of 100+ people so this was the most people I’ve seen in one place since before then.

It’s also a public holiday today (Monday). The first public holiday since lockdown. Heaps of people are traveling locally as we’ve been in isolation for such a long time. I feel like we’re exhaling after holding our breath for months. It’s a nice feeling.

There’s so much craziness going on out there. Take care of yourselves.

I don’t want to get obnoxious with food pics, but this was too freakin’ good. My wife and I always cook a big family dinner on Sunday evenings. It’s the one night a week all of our kids are generally available, and nothing lures them to spend some time with Mom and Dad like a delicious meal. Last night we did chicken burgers with homemade guacamole and homemade ranch. Chicken burgers is nothing new, but, instead of buying ground chicken from the store which is all breast meat, we bought chicken thighs and ground the meat ourselves. This way, you get the more flavorful meat with a little more fat content. We mixed in bread crumbs, seasoning, and feta cheese. Fortunately, we have leftovers for lunch.

Oh boy, I am so having that for supper one night this week.
Have a pack of chicken thighs in the fridge right now.
Might have to dust off the grinder though.

We used a food processor to grind the chicken thighs. I’ll send you a link to the recipe.

Just got a food processor last fall. Better idea. Can throw that in the dishwasher. The really old meat grinder, not so much. Usually just do already cooked meat in that thing, items like roast beef or corned beef for hash.

Being dishwasher safe is a huge bonus to using a food processor. We had to run the chicken through in batches. At first, we put a lot in there, and it got jammed under the blade.
